We’re going to make smashed sweet potatoes. I think they’re delicious. Why do people only eat sweet potatoes at Thanksgiving? I can’t figure it out.
So, I’ve roasted these at 375 degrees for about an hour and they’re really done when they’re nice ans squishy and drizzle it with a little butter and salt and pepper. There are wonderful but today I’m going to make smashed sweet potatoes because it’s a special day.
These have cooled a little bit so I can handle them and I’m just going to take a spoon and scoop out the wonderful sweet potato flesh. Okay.
Now, for all the flavors, that’s the good part. So, the first thing is I need to have a cup of orange juice, a half cup of heavy cream, no wonder it taste good right? I’m just going to put in two tablespoons of butter, a teaspoon of nutmeg, half a teaspoon of cinnamon and the last thing is a quarter of cup brown sugar. This is one of those recipes that just put some sweet potatoes and a mixer and I start adding things until I like what it tastes like. So, I’m just going to try to mix her on and mix up all these gorgeous ingredients.
So, I want the texture of this to be really coarse but not pureed. I hate baby food. I like when it has some texture to it and it just takes a minute in the mixture to do that. Oh, it’s so, so good.
It really bring up the sweetness in the sweet potatoes—all the brown sugar, and the orange, you can taste all of it. It’s just wonderful, the nutmeg and cinnamon. And this too is a great dish for holiday or for any kind of entertainment for that matter. Put it in the oven. Put that half an hour at 375 degrees. How gorgeous is that?
