Um... isn't that ice cream going to be super-watery? Ice cream is supposed to be 1/3 ilk, 2/3 cream, not 1/2 water and 1/2 half-and-half (aka, 1/2 water, 1/4 milk, and 1/4 cream). Seems to me you should be wanting to add powdered milk and/or powdered creamer, which would then rehydrate with the water in the ice. Just use a good brand, because lots of powdered milk brands are nasty. An upside to that approach is that you could do it on a backpacking trip; your only essential ingredients (milk/cream and sugar) are dry (you can get vanilla powder as well or make your own vanilla sugar). If the ice is too grainy, to increase the smoothness, you could add some CMC (cellulose gum) -- but don't add too much or it'll get the texture of bath gel.
