Well, today I find myself at Chipotle & Jalapeno, an authentic Mexican eatery actually one of my favorite places. So, stay with me so I can show you why. So, you understand why this is one of my favorite places to come and eat. The Mexican restaurant that I’m at now is one of the best examples because Mexicans eat here and whatever we want to find a place that it’s a little bit more authentic, we have to look at the people that come and eat in the place. To illustrate this for you, I have today a Sopa de Tortilla, which is a tortillasoup made basically from chicken broth that has a little bit of tomato paste or actually crashed tomatoes into the broth, another element of the soup which is a very characteristic of Mexican cuisine with the avocados. Also spicy peppers, they have a woody texture. A little bit sweet that gives it a punch to the soup and we really want to have that.
Another element that we’re going to add to the soup is queso anejo which is a white cheese, a little bit of hardy and quite hard. Salty gives also a good contrasting flavor to the soup, some cream, we’re also going to add chicharrón which are fried pork rinds, and obviously the last element and not the least which gets into the soup will be the tortillas that are deep fried and then added to the soup. It sounds really heavy and maybe even fattening but this is not the case. These elements are usually made from fresh ingredients and very low in fat except for the chicharrón, but that you can remove from the soup if you don’t want which will be a variety of a different type of tortilla soup eaten in different areas of Mexico. Also to accompany this meal after we take the siesta which obviously we’re going to do after we enjoy such a soup will be a salad.
The salad that’s made from mangoes, avocados, cilantro, red onion, and a little bit of a vinegar that the chef doesn’t want to show that recipe with me but that’s okay. Those are secrets of the cuisine. But if ever you want to enjoy such a thing, you’ll need to go to Mexico to do that. You can come here and have a blast just the way that I do.
