Olla! It’s Chef Juan from Foodwishes.com with Spicy Tomato Rice kind of like Spanish rice, only not in Spain. So it’s just spicy tomato rice a very easy recipe, very delicious.
So take some butter. Melt in a pan. Add some regular long grain rice. By the way, heat is on medium low here. To that, we’re going to have some diced jalapeño. We’re going to chop the bottoms of the green onions. Save the top for the garnish and some garlic. How much? Go to the site, I believe it’s there.
Now, give that a stir into the butter then we’re going to coat the grains of rice with the butter. We’re going to add some chili powder. We’re going to add some chipotle, some cumin, and some salt.
All right. We’ll give that a mix. And once that’s all nicely coated and the spices are kind of warmed up a little bit in that oil, we’re going to add our chicken stock, some tomato sauce, just plain tomato sauce and we’re going to bring that to a simmer, cover it and simmer it on low for 20 minutes.
Then turn off the heat. Leave the cover for eight minutes. Don’t peek. After eight minutes, it’s going to look like that. You’re going to fluff it with a fork which is the key because if you leave it, you’re going to get a big lump. Or in Spanish they call it “el lumpo.”
So what you want to do is you want to fluff it with a fork that releases the steam. We’re going to dump that that out on a serving platter. And there is the perfect texture you want, a little bit of stickiness, a little bit of tackiness. You want the grains of rice to kind of stick together but you want them to be also at the same time separate, all right? Separate, yet together.
Throw some chopped green onions on top and serve it with the food. Really nice side dish, change your taste, very delicious, you got to give it a try. It’s muy, muy, muy, muy, muy, muy, bueno.
