There is nothing a like a bowl of warm hearty soup, especially when it’s homemade.
Hi I’m Chef Jason Hill and today I’m going to share a split peas soup recipe that you’re sure to enjoy. Let’s start with one pound of dried split peas, I’ve already rinse and sorted this. Next I used one half onion, two whole carrots, two celery stocks, two whole cloves of garlic, one small bay leaf, some frozen bacon, finally I have eight cups of chicken broth, you could use vegetable broth or water if you prefer.
Now I dice the onion, have the carrot in slice, have the celery in slice, remove skin from garlic, you could use a garlic press or finely minced it with your knife. Placed your top vegetables in a bowl and set aside.
Now dice about a quarter to a half a cup of frozen bacon. Bacon that is frozen and diced is a lot easier than thawed bacon.
Okay, I have my soup pot on high and I’m going to add my bacon to it. You could use olive oil if you prefer, probably I will use about three tablespoons. We will let that sauté down and then I’m going to add the veggies.
Now that I have my vegetables cooked down I’m going to stir in the peas and stir for about a minute. Now I’m going to pour my eight cups of chicken broth in. Next I dropped in the bay leaf I bring this to a boil, cover and simmer for about 30 to 45minutes. After about 45 minutes I mashed the soup.
