Anjali: Hi, my name is Anjali. Welcome to Thai Food Cast. In this episode, we are going to make Spring Roll. We called this poppy in Thailand. But you can find many kind of spring roll all throughout Asia. Spring roll is very popular appetizer, and this recipe is vegetarian, so every one can enjoy it why wait? Let’s get started.
These are the ingredients that you going to need to make spring roll. And you need to make a trip to Asian Food Stall to get most of it. Spring Roll wrappers, one bunch of bean vermicelli, it also called crystal noodle, and this is just soy sauce you can pick up anywhere. This is for your dipping sauce, it taste sweet, but it have a little bit of chilly in it. 3 cups of beans sprout, 1 cup of shredded carrot, 1 cup of chopped mushroom, 1 teaspoon of pepper, half gallon of vegetable oil for deep-frying. 2 table spoons of flour, a quarter cup of water.
First we are going to pear the wrappers, it won’t come first and so you need to let it off for 10 minutes, before you peel it, so it is a little bit tricky because the wrappers are very thin, so you need to peel one at a time. You pull up from the corner and slowly pull way and be very careful, and very thin wrappers. Okay, after you peel it you need to cover with the cloth so it won’t dry and hard, so it is easy, when you wrap it. Next we are going to soak crystal noodle in a warm water for 5 minutes until soft, while we wait for a crystal noodle to be ready, we are going to make a glue, we are going to use the glue to stick the wrappers together, so it wont open when you deep fry it. So we can put the flour one cup and water and mix all together nicely and put it in the microwave for about 30 second then it will be ready. Crystal noodle usually is very long out of the pack, so you need to cut in to 2 in pieces. Chopped the mushroom into small pieces, now we are going to mix all the ingredient together, beans sprouts, mushroom, crystal noodle, carrot, pepper and then soy sauce, and mix it all together. My friend really like this recipe, they always ask me to do it again and again, again.
Now it is the time to warp this spring roll. Take one wrapper lay down, by pointing the corner to yourself take the mixture, or half cup and put in the closer to the corner, arrange it nicely, wrap the corner end and roll about twice and wrap the left side in and right side in and roll in till end and leave about 1 inch, and put the glue and roll it over and then you got this spring roll.
Now we are going to deep-fry this spring roll, if you have deep fryer you can do that if not you can use wok. Pour in vegetable oil, turn on the stove to the high heat, when the oil is hot, put in this spring roll and then deep fry for 5 minutes, until it turn it to golden brown, so you need to turn the roll so it cook evenly. So when it is done take it out and rest on the paper towel so it’s sock up the oil.
This recipe you make about 12 spring rolls and you serve with the dipping sauce, and its really delicious. But I need to warn you, once you make for your friends and family they can keep asking you to make again and again. Thank you for watching Thai Food Cast today.
