How to Make Sun Warmed Mozzarella and Bread Salad
Hello, this is Chef John from foodwishes.com. And today I'm going to show you a
delicious sun drenched, sun warmed, sun bathe mozzarella and bread salad with pesto.
This is bunch of leftovers. I used to make this incredibly delicious salad. I had about a
third of loaf of brown country wheat Italian bread. It was stale. You know how this show
in TV says, oh, they make bread crumbs. You're not making bread crumbs. They don’t
make bread crumbs. They just say that.
So what I do is I sliced it thin. I put on a big plate and I dribbled over. I had about a half
of cup leftover pesto. So I put half on it about a quarter cup. I'm going to save that quarter
for the dressing. So I put about a quarter cup of that dribble on top then I sliced up fresh
mozzarella. This doesn’t work with that rubber ball hockey puck mozzarella. It’s in the --
next to the hotdogs in the supermarket. Go to the cheese department and get mozzarella
fresca, fresh mozzarella. It’s soft. It’s juicy. It’s delicious.
Now you want to put salt and pepper in there and generously season with salt and pepper.
Some red pepper flakes. And as the Italians like to say when they put on the pepper
“kick-it-up-notch-ada”. Okay, so we’re going to kick-it-up-a-notch-ada which I believe is
southern Italian. Then I'm going to take my quarter cup leftover pesto sauce. I'm going to
drizzle in a couple of tablespoons olive oil and a couple tablespoons of white wine
vinegar just to make a dressing.
I'm going to drizzle it over the top. It looks so delicious. It looks so beautiful. But make
sure you drizzle in between the nooks and crannies, so it soaks into the bread. And this
wouldn’t be delicious eaten as this. No one would complain unless they were just so rude.
No one will complain about this. But the secret ingredient in this recipe is the sun, giver
of all life. We’re going to move this into a window sill. And we’ll let it set for about 20
minutes. Yes, it’s safe, relax. Nothing is going to spoil.
But the sun is going to soften the cheese. Some of the moistures are going to come out to
the cheese and soaked into the bread and soften the bread. And the heat from the sun is
going to help the herbs and the spices and the garlic and that pesto dressing, soaked in
everything and it just amazing. You can taste the radiation.
