Sweet Potato Souffle

All right, my name is Joti. I’m from Washington D.C. and we’re going to make a little southern
delicacy today which is Sweet Potato Soufflé.
We’ve got a couple of sweet potatoes here. I use about two tables spoons of sugar, just a hint of
salt, not much. One egg, I need a quarter cup of milk, about half a teaspoon of vanilla, half a cup
of brown sugar, so basically just a couple tablespoons of flour. Butter on hand, about half a stick
total and we need some pecans and some flaked coconuts.
Okay, let’s peel these sweet potatoes first before we boil them. Good sweet potatoes have this
kind of deep orange color to them. We’re going to boil these potatoes a little bit, soften them up
so we can mash them and then end up putting it in the dish, so I’m just going to drop them in this
boiling water.
While these potatoes are boiling, we’ll measure out some of the other ingredients. So, about two
tablespoons worth of sugar, a pinch of salt -- that seems to be a pinch. Okay, we got one egg that
goes into the mixture, about two tablespoons worth of butter. Okay, our next ingredient is a
quarter cup of milk. I’m not terribly exacting in measurements here, so I hope that won’t affect
the final product too badly. Half a teaspoon vanilla.
Okay, after boiling for about 15 minutes or so, we can go ahead and mash up these potatoes.
We’re going for 1 ½ cups worth of sweet potatoes and I think this should be just about right.
Now, we can add it to the other ingredients. I’ll go ahead and put a little cooking spray on this
dish to try to keep things from sticking then we’ll pour this in. Okay yes, now that we have the
sweet potato mixture in here, we’re going to make the topping. We’ll put the topping on here and
then we’ll cook it.
So, the first thing for this topping, going to be half a cup of brown sugar and third a cup of flour,
two tablespoons worth of butter and then we need half a cup of pecans and then half a cup of
coconut. All right, it’s not that well mixed but I think it’s good enough, so we can throw this on
top. Spread it out as best as we possibly can. I didn’t mix in the butter very well, so it’s not
smooth as topping but it’ll be fine. Just spread it around to the best of your abilities. And we got
something that’s ready to go into the oven. We’re going to put it in the oven here and bake it for
35 minutes at 350 degrees.
It’s been cooking for about 35 minutes.
