Hello. Welcome back to fixmyrecipe.com. You know who I am, Chef Billy Parisi and I want to get acquainted with you. So, keep submitting those recipes to the box that’s right below this video and I will take care of all of you recipe needs.
Our next fix goes to Sarah Reid Menefee of Louisville Kentucky.
She sent us a recipe for Tilapia and Papio. And now, I know why there’s no flavors. You got no herbs, you got no season, you go no vegetables, you got nothing in here. Don’t worry, we’re going to jam pack this paper bag full of goodness and you’re going to love the flavors that this brings.
Alright Sarah, first things first, let’s roll out our parchment paper and let’s start getting these vegetables in our Tilapia and Papio. Don’t forget to spray down with some palm. First, we’re going to throw down as many vegetables as we can. Put that fish right on top, loaded it up with herbs and seasoning.
Let’s throw down some Red-B potatoes that we so nicely sliced.
Alright Sarah, after out potatoes are laid down, I’m going to salt and pepper them right now because at the end when everything’s on top, it’s going to get hard to season those potatoes.
Alright Sarah, next I’m going to lay down this Tilapia but first I want to season with little salt and pepper.
Okay, now we’re going to lay this fish right down on top of our potatoes.
Alright Sarah, now we’re going to load this thing full of vegetables. First, let’s put down some asparagus that we sliced long ways.
Now, let’s get some baby carrots that we sliced on a bias, don’t forget to peel them first.
Alright Sarah, I’m going to use tomatoes next. You don’t have to but since they’re in season right now and so beautiful, I just quarter them and now, I’m going to put them right on top.
And just because Sarah, I’m going to throw a little slivered garlic right on top, it’s going to add a little more to our dish.
Okay Sarah, here is where you’re leaving out, your flavor in your Tilapia and Papio. We are going to absolutely load this thing with lemon rind, lime rind, some fresh thyme and a little more salt and pepper.
Alright Sarah and for little extra flavor, I’m just going to drizzle a little extra virgin olive oil. Alright Sarah, also we’re going to do is wrap this up in our parchment paper, put it on a pan, pop it in the oven around 325, we’re going to let it roast for about 30-35 minutes and then it is going to be just unbelievable.
Alright Sarah, my kitchen smells absolutely phenomenal. Our Tilapia and Papio has been in the oven for about 35 minutes, we’re going to take a peep. Oh boy! Oh boy! Oh boy!
Sarah, this smells so good. I have got to get a taste this but first remember, do not be afraid to load this thing full of vegetables, season with salt and pepper, fresh herbs, fresh lemon and lime rinds and you are just going to be so please with this result.
