John: Hi! John Ham here from Fitness on the Run. And today, I’m with Julieanna Hever, the Plant-Based dietician. And we’re going to go through some Indian food recipes using one of my client’s sauces called Basu’s Homestyle sauces that you can get at Home Foods.
So today, we have this Vindaloo sauce with basil and it’s a vegan product. So what better than to have a Plant-Based Dietician to tell us how to use it. What are we going to do today?
Julieanna: First of all, can I just say that Indian food is my all-time favorite food, no question. And going plant-based, eating Indian actually works because there’s a lot of plant-based option, but it’s not always vegan. But I’m so excited to find a vegan sauce.
So why don’t make like a Vindaloo Veggie Stir Fry.
John: Sounds good.
Julieanna: Okay, with rice.
John: Perfect.
Julieanna: This is a great place to start because look, there’s every single color of the rainbow. So it’s perfect for a stir fry because I always tell people you want to have every color of the rainbow everyday. So we always have to start with onions, right? So when I cut yellow onions, I cry a lot so scallions are a little easier on the eye and it tastes really good. I’m taking my scallions, I’m going to cut them. I’m still excited about the sauces because like I said, I love Indian foods so much but it’s making all the sauces with all the spices and herbs like I always wished that I was born Indian so I would know how to deal with all the amazing herbs that they have, like you can go to an Indian market and get that because there are still many different spices and they always put them in the right combinations and it’s so delicious.
John: Right. And this is great because we don’t know how to do Indian foods. So all we do know is how to cook that juice and all we had to do is just add the sauce. It’s fantastic.
Julieanna: So it can get any easier than that. There’s nothing healthier in the world than a green vegetable. If you’re going to do anything for your health, add green vegetable.
John: And by the way, please save these for our dogs.
Julieanna: Awesome! They’ll eat them?
John: Hell yeah.
Julieanna: Oh my God! That’s so great. That’s so good for them.
John: Little treats.
Julieanna: That’s really cool. I just got my dogs to eat color green stems. So these are Christopher’s Vegetable, broccoli and it got so many amazing compounds in them that literally they’re like, cancer fighters all by themselves. You should eat greens every single day as often as possible. Throw them in your smoothies, have a salad. If you want to have calcium, this has the highest calcium you could possibly get from any food. But if you get them from Bok Choy, all your green colors, they have tons of calcium.
You know that they look a little soft and a little brown, and then add the veggies. This will smell good in here. Every color represents a different nutrient that’s why you want to get every single color everyday. The green has a chlorophyll, the red has the red carotenoids, all those are phytochemicals and antioxidants to fight disease, make you healthy. So I don’t want them to get too soft before we add the soft because we kind of want them a little bit textured and not too soft. Now, I want to keep the sauce on that for a few minutes just to really cook it well.
Okay, so now we’re going to add diluted salt. I can’t wait to taste it.
Good job. We plated them right, very easily made. And here is our beautiful stir fry. Okay, let’s put some in and taste it.
John: This is unbelievable.
Julieanna: Oh my God! It is so good. It’s so spicy and pungent and tomatoey.
John: Right. And there are so many different flavors that are in that sauce. Incredible.
Julieanna: Oh my God! It’s incredible. And mixed so well with the vegetable. Okay, that’s amazing.
John: You hit the bottom of the part on this one just like all the other things that you do.
Julieanna: Yeah, these are amazing.
John: Unbelievable.
Julieanna: This is phenomenal and very healthy. You’re getting all your vitamins and minerals and fiber.
