As a southerner, I am certainly familiar with iced tea and lemonade and all the possible permutations you could come up with. But I have to say this idea of raspberry-watermelon lemonade, well, that was a new twist.
Here is Chef Chris Green from the Viking Cooking School in Memphis, with this recipe that is sure to add sparkle to any summer day.
Watermelon is one of those perfect ingredients for summer. It is very plentiful and because of its name, watermelon that tells you that is only great as a drink.
We are going to start out with some diced watermelon. We are going to place this one into the blender, also our raspberries, and start to puree. Very quick, very easy!
Now, we need to strain this because we do have seeds from this watermelon and from the raspberries.
We are going to use a fine mesh strainer and we want to move some of that flesh around and those seeds because it is a fine mesh. It can get locked up very easily and our liquids would not pull out. All right, that looks good.
So we have here a watermelon and the raspberries, but now we need our lemonade feature.
So, let us take lemon juice and sugar, and we are going to combine this, just stir them together until they dissolve. Give it a quick stir, and then because we want to serve this cold, we like to have all of our elements cold also. I have one in the refrigerator. We are going to put this one in to chill for one hour.
Here is nice icy lemon and sugar mixture, this once going directly in -- perfect.
We will give it a little stir, and then a nice beverage glass. So, let us pull a good tall clear drinking glass, some ice, and we are going to pour in some of our mixture, and then to give it a good fest of touch, how about a little club soda. This is going to give us some nice sparkle to a drink.
We will garnish with just a touch of watermelon, a sprinkle of mint and there you go; a fantastic quick drink for the summertime.
