Speaker: This episode of betterbeer foods features the Fish Tale Organic Amber Ale and Organic Indian Pale Ale brewed in the Republic of Cascadia.

Welsh Rarebit. The ingredients are 16oz sharp cheddar butter and flour, one tablespoon Dijon mustard, one bottle pale ale, one fourth cup heavy cream, Worcestershire sauce, salt and pepper, Texas toast.

Make a roux by melting butter and coating the flour in melted butter. Whisk in Dijon and Worcestershire. Add beer and cook until desired thickness. While whisking add the cream. Slowly add the grated cheese. Stir until cheese has melted. Toast bread. Pour sauce over bread. Enjoy.
