Our new fix goes to Karen of Pasadena, California. She submitted another recipe to us for White Gazpacho, wants to recreate it, something she had when she was a child. Don’t worry Karen I’ve got a brand new recipe for you.
Karen, the first thing we need to do is soak some bread. So, get a loaf of French bread. Be sure to trim it, then we’re going to soak it in this vegetables stock. And in the meantime, we’re simply going to prep our vegetables, get it ready for this White Gazpacho.
Now that everything is prepared, we want to puree it, so in our blender. We’re going to go ahead and squeeze most of the liquid out of that bread, place it in there along with the cucumbers, sweet onions, garlic, green onions, and almonds. Karen, we’re going to get this a few pulse just to chop it up. Next, we’re going to add in our lemon juice, our white wine vinegar, some of this olive oil. And if you want some more liquid, we’re going to use that vegetable stock. And we’re going to finish it with a little heavy cream. And do not forget to season it with white pepper and some kosher salt.
Karen, this came together so easily and very quickly. And I didn’t forget about you. We are going to use avocados, poblano peppers, and tomatoes for our garnish. Don’t forget to chill this. It takes about 30 minutes. Then we’re going to pour our self a glass.
