Ashley: Good to be here. I am really sad about our last week together.
Anthony Caporale: I know, but you will be back, right?
Ashley: Absolutely.
Anthony Caporale: Okay, great. Well, this week we’re going to put together the ultimate hanging out on the beach, Memorial Day weekend drink, comes all the way to us from Italy, yeah, so variation of a Bellini and Bellini is traditionally a drink, this comes from Italy, made with champagne and fresh squeezed, peach nectar or peach puree.
Ashley: Wow!.
Anthony Caporale: Yeah, and as always, we’re going to mess a little low. So we’re going to start with a wine glass, I like to build my own wine glass ,and instead of just champagne and peach nectar, I’m going to start with about three quarters of an ounce of lemon rum, and then I’m going to add three quarters of an ounce of peach schnapps. Alright, and I’m going to top that whole thing with my peach nectar, and I’m going to fill it a little bit short of what I actually want the drink to end up. I actually want the drink to end up about here. So I am filling it about maybe a half inch short of that, and I want to make this cold, but I don't want to drink this on the rock, so I am going to show you a little trick. In my shaker tin, I’m going to put a nice big scoop of ice, and then I’m going to take my drink and add it to my shaker tin, and shake up. I must shake the stuff real good, probably 15 to 20 seconds or until the tin starts to frost, and when you see frost on tin, that’s how you know that the liquid in the tin is at the same temperature as the ice.
Ashley: Using those muscles?
Anthony Caporale: Using those muscles, yeah. What do you think I got this by going to the gym? So when it’s nice and frosted, I just tip the mixing glass, and it comes right back up, and I’m going to strain this back into my service glass, and you can see now, it’s really frothy, and that’s added a lot of flavor and it’s actually added volume to the drink, see that?
Ashley: Yeah.
Anthony Caporale: Was down here, and now it’s about half inch higher, right? So it's one of the reasons that I under filled it. The other reason that I under filled it is for the crowning ingredient, which is champagne and I’m going to top this drink with some champagne, bringing it right to the top, alright, and then --
Ashley: I love the bubbly.
Anthony Caporale: Isn’t that wonderful? Now, you noticed that I topped it with the champagne, I put champagne in I after I shook it. If I had added the champagne to the drink and then tried to shake it, the champagne would have popped my mixing glass right up the tin. So whenever you‘re adding carbonated ingredients to your drink, you add them last, if you’re going to shake the drink which is what we did.
Ashley: Here we go.
Anthony Caporale: Terrific!
Ashley: That’s easy start.
Anthony Caporale: Yeah I know. So about three quarters of an ounce of your lemon rum. Now you can use any flavored rum you want to, you can just use regular rum, but I like the lemon flavor, because the citrus goes with the peach real low, and then some peach schnapps, and then peach nectar, and if you’ve trouble finding peach nectar, go to the ethnic food section of your supermarket, and it usually comes in a box. There is a couple of different brands and it’s labelled peach nectar, should be pretty easy to find. Big scoop of ice in your tin, and again we’re going to see, where the drink is now ,and then shake it up real good. Good job, and if got to shake your drink, really shake it, and look how much higher in the glass that drink is. That’s actually added air all throughout the drink, and that means you’re going to taste more of the drink. Top it with champagne, as we are far away from the beach right now.
