With the ribbon of juicy fruit and layers of sweet crunchy nuts, my Blueberry Coffee Cake is absolutely delicious. There are no downsides, thanks to some healthy swap-outs that are really simple.
The first of those is that I'm only using two tablespoons of butter in the whole cake, which is a fraction of the butter, typically found in a cake as delicious and moist as this. I substitute some of the butter with two tablespoons of healthy canola oil. To that I'm going to add a-half-a-cup packed brown sugar, and brown sugar is no healthier than white. I just love the flavor, just gives a cake fuzziness, it's right in there.
What I'm going to do is just cream this butter and sugar together. I'm just going to add two eggs one at a time, so that each egg can be well incorporated. A teaspoon of vanilla extract -- now vanilla is there to calm you in times of stress. For my next big swap-out, a cup of yogurt, non-fat, plain yogurt, just get that in here. Often times in cakes like this, they call for sour cream and yogurt is pretty much doing the same thing that sour cream would, giving it a moistness, tanginess, and lovely body, without the fat.
The wet ingredients are done, now on to the dry. Starting with 1 cup of all-purpose flour -- the important swap-out here is to combine that with 1 cup of whole wheat pastry flour. It's whole wheat flour that is extra, extra tender, you can also use just regular whole wheat flour here. Then 1 teaspoon of baking soda, help the cake rise, half-a-teaspoon of salt, just whisk that together. I'm just going to add these dry ingredients into the wet in two stages. Just mix to incorporate, that's done.
Now for that sweet nutty layer I was promising, just starting with 3 tablespoons of white sugar, half a cup of walnuts for great flavorful crunch. Now a half a teaspoon of cinnamon, and steady show actually, that just smelling cinnamon can help you think more clearly, just stir together. You can start building your cake.
I have here an 8x8 baking dish. I've just sprayed that with some cooking spray. Now I'm just going to put half of the batter into the pan. Spread it around, takes a wee bit of patience as it's kind of a slightly sticky batter. Next layer, half of the nutty, crumb mixture, all in there. On top of that a cup of fresh blueberries. These are going to burst in there and form a beautiful ribbon of fruit. Then the rest of the batter, spread this around. Now finally, the rest of the nut mixture on top. This is what makes it really look like a coffee cake to me.
Okay! That's it. Now you just need to bake it at 350 degrees for 30-35 minutes. Let it cool, unmold it, and cut it into squares.
