Add some garlic and ginger to a heat of tablespoon of oil, and then just fry it to 30 seconds.
Now add the finely chopped processed onion and cook for about 10 minutes until browned. I am adding a mixture of equal quantities of ground turmeric, paprika condiment. But you can use a good curry powder or paste. Cook this for a few minutes.
Now, I let my curry spicy so I’ve just added a chopped red chili. I am now adding cubed chicken breast meat and then I’m going to cook this for a few minutes until it’s turned white.
I’m now adding a cup of water and I’m going to stir this and let it cook for around 15 minutes. I’m now adding a chopped skinned tomato and a spoonful of tomato paste puree. Stir this in and let it cook for a few minutes more. I’m now adding chhole masala and a pinch of dried fenugreek leaves. Now, these spices give your curry a wonderful authentic aroma.
Now, I’ll add some vinegar, any type will do and stir this and cook for a few minutes more. Finally, add some fresh green coriander and some salts to taste.
And your curry is ready. Serve with rice and breads.
