Hello there. Today we’re going to make a festive holiday treat just for the winter souls classic Wassail and a classic fondue to go with it. Here are the ingredients, orange juice, pineapple juice, hard cider, cloves and cinnamon. We have a large pot. I'm going to be pouring the orange juice in the pot and then the pineapple juice.
Now we’re going to add the cloves and the cinnamon sticks. We’re going to bring it up to a nice simmer and let it cook for half an hour to an hour just so the flavor of the cinnamon and the cloves infuse themselves into the mixture. Everything I love about Wassail, I learned from my ancestor Hildegard who use to wassail the way to the winters and drunken contentment that’s why we’re using the hard cider instead of ordinary apple cider.
All right, are we ready to make our fondue? We’re going to be using Swiss cheese which I've already shredded. We’re going to be using the gruer cheese which I've also already shredded. Other ingredients, cornstarch, white wine, lemon juice and a clove of garlic which I've already cut in half. Take the garlic and use it to rub the inside of the sauce pan.
The first thing I'm going to do is to combine the Swiss and the gruer cheeses. I'm going to add the cornstarch combine the ingredients and the white wine. Now that the wine is warmed, I'm going to start adding a little bit of the cheese in and stirring it up. We've added all of the cheese to the pot and it's thickening right up. So we have the lemon juice. Meanwhile, a Wassail is simmering away.
Time to transfer the fondue to the pot for the table and I'm going to light the candle on the fondue pot then set the pot right on top. We have pieces of bread that we've already cut out. We’re going to place them all to skewer. So, Wassail has been cooking for 45 minutes. It smells wonderful.
So now we’re going to add the hard cider, one little bottle at a time. We will bring it back up to the simmer and then turn it off. I'm going to taste just a little bit to make sure it's already for perfection.
