In this segment, we’re going to learn how to do a fancy lime wedge such as this.
Take your lime. And take a good zestra, a 5 or a 4 or 6 point zestra. Whatever you can find with a little holes in the middle. You're going to start in the center or the equator of the lime and score the lime all the way around the equator, like this.
From end to end. So it’s nice and straight around the equator. Now, we’re going to want to go from the equator to the poles. To the pole and then on exact opposite side, so they meet to the pole. And then in the middle spaces, again. So you have little green left. Right centered in the middle. From the equator to the pole. Again, the equator to the pole. And do that on the other side. Instead this time, start your scoring where there isn't scoring on the other side. So you have scoring here, I don’t want to go there. I don’t have scoring here, I do want to start there. To the pole. And again, no scoring to the pole. And again and again. And you're left with a nice scored lime.
I want to take this lime and you want to cut it following two scores, right in half. So from pole to pole. Right in half and then do the slice in the middle like we learned in the previous segments. And then just follow your scoring. And then you're left with a nice lime that is scored into two different directions with a little bit of unscored skin in the end. A beautiful different way to do a lime wedge.
