Hi, I’m Korey Kealey, mother of three, and food specialist. Tonight is a special night for the Kealey’s. It’s finger food feast night.
One night a week, I’d like to get a little creative with dinner. I prepare a meal that the kids get to assemble themselves. I found that my kids are more interested in what they eat when they get to prepare it. I’m able to teach them some basics on nutrition and make it fun.
Tonight, it’s going to be fish face BLT wraps. Fish is one of those foods that can be a hard sell for some kids. But it’s so important to include in their diet. Fish of all varieties are full of omega three fatty acids that are essential in promoting healthy brain development. Eating fish regularly can also help reduce blood pressure and cholesterol levels and it promotes heart health, not to mention, it can decrease the risk of certain cancers. It’s just plain good for you.
This meal almost makes itself. It’s perfect for that night of the week when one kid has hockey, one has soccer and the other karate. Everything can be prepared ahead of time.
To get started, bake your favorite fish fillet. I prefer Blue Water’s Potato crunch fillets because they’re really crispy outside and tender and flaky inside. Well, those who are baking as per the instructions on the box. I prepare the rest of the fixings. I fire bake some turkey bacons which is lower in fat than regular bacon, and I chop with my kids’ favorite sandwich fillers. My kids like grated carrots and diced cucumbers that you could mix and match any combination. I also like to throw in a couple of grown-up alternatives like avocado, hot peppers, and maybe some Havarti or other cheeses. You’ll never know when your kids are going to want to expand their culinary horizons.
I like to use special rubs to make the meal more fun and tasty. Today, I’m using sun dried tomato and basil rubs. I also said that my kids’ favorite dressing to zest up the rub as well as the low fat milk and other sandwich spread. Ranch, Caesar, Creamy Italian that all work and taste great.
And that is it. You could sit back and let the creativity begin.
