Male: Come here and let me show you how to make a guacamole. Do you make guacamole?
Female: I have made it before but you know, I could use a little refresher course.
Male: Okay. So first one, you got to start off and get avocados, right?
Female: Alright.
Male: So when shopping for avocados, right, you want to pick some of these up and these are actually good California Hass avocados.
Female: Alright. How do you know if they’re ripe?
Male: Well, when they’re ripe, first of all they should give slightly, alright?
Female: Okay.
Male: They shouldn’t completely give. It gets to a point where they really kind of feel like they kind of rot in the middle, right?
Female: Alright.
Male: But you should pick them up and they should have just a nice little gentle squeeze, alright? If they feel like baseballs and you’re a hundred miles away from any other avocado, go ahead and pick them up anyway. But you can fill them into a paper bag, seal them up and they’ll ripen in a day or so.
Female: Can you do that with a baseball, too?
Male: You cannot do that with a baseball.
Female: No? Alright then.
Male: But you can do that with avocado.
Female: Okay.
Male: Okay. So we got these avocados, right? Alright, so I’m going to open this guy up.
Female: Big knife?
Male: Okay. Now, promise me you’re going to be careful when you do this, alright?
Female: I promise, yes.
Male: Okay, alright. So you take your knife to the top of the avocado, hold them in your hand like that.
Female: Hold it in my hand, alright.
Male: Alright, and you’re going to drop the knife down until it gets the seed, okay?
Female: Okay, hold on.
Male: Alright, straight down like that, boom. Okay.
Female: Oh, I’ve touched the seed.
Male: Alright. Then you’re going to take the avocado and you’re going to roll it around the blade just like that, okay?
Female: Making sure my hand is nowhere near that blade.
Male: Okay. You got that?
Female: Yes.
Male: You need to go around a full circle.
Female: I made it.
Male: Alright, cool. Good deal, okay. Put the knife down.
Female: Okay.
Male: Alright. Take the avocado, you twist it open like that.
Female: Easy enough.
Male: Okay, that’s cool, right? Okay, now you’re going to take the knife and it’s going to pop the seed. Pop the seed, give a little twist, it comes right out.
Female: There you go.
Male: Cool, right?
Female: Yeah.
Male: Learn something new every single day.
Female: Yes, alright. Good!
Male: Okay. Now what we’re going to do is we’re going to take the avocado, take a big spoon, not a small spoon but a big spoon. You want to stick it into the side and you’re going to try to put the spoon absolutely in the back—
Female: Where the dark green is?
Male: Where the dark green is, in the back part of the peel itself.
Female: Look at that.
Male: And it comes out in one big beautiful piece, you see that?
Female: One swoop.
Male: One swoop, just like that.
Female: Uh, maybe mine is two, but close enough. That’s not so bad.
Male: One, two, it doesn’t matter. It all comes out. Alright, so I'm going to scoop these out just like that. You can get a nice rhythm with it. So I’ve got the avocado. Alright, let me take a spatula and I’m going to give it a nice kind of mash like that. Actually, I think a wooden spoon would probably do a good job. Okay, so we just want to give the guys a big chunk of that one.
Female: Okay. Good.
Male: Now see this. I’m going to take like half of a red onion that’s finely minced. I’m going to fold that in as well. I’m going to take some chili and kind of mince this up. Now, taking the ribs and the seeds out and you see this stuff right here, right? This is actually where the chili oil that lives inside the chili.
Female: So that’s the spicy part?
Male: That’s the spicy part, so I’ve cut that out.
Female: Okay. Can I get started on the limes over here?
Male: Absolutely, yeah. Good. Perfect. Okay.
Female: And someone—I saw someone do these ones, no idea why but I’m doing it. Is this right?
Male: That’s perfect.
Female: Okay.
Male: Sometimes limes can be a little stingy, right? They don’t really juice that well. So if you want to kind of roll them out, kind of break up some of the pulp, right, and they’re a little easier to juice.
Female: Alrighty.
Male: Okay, perfect. Now, I give this a little squeeze in there. Okay, now I’m going to take some cilantro. I’m going to roll it up real fine and just kind give that—
Female: Cilantro is always a Mexican food, correct?
Male: It’s always a Mexican food. It’s always delicious.
Female: It is. I love the smell of it. So why do you like it? What do you equate it with?
Male: It smells authentic. I mean I equate it with a lot of American cooking. I equate it with Mexican food.
Okay, so a little bit of—lots of lime juice. Avocado, lots of lime juice—
Female: I’m trying, here we are.
Male: A little bit of salt and then give it a nice stir.
Female: Good.
Male: Isn’t that juicy?
Female: It is very juicy.
Male: Delicious. Okay, give it some nice stir.
Female: Alright.
Male: Fold the whole thing together.
Female: Good.
Male: Okay, great. You want to taste it?
Female: Yes, I would please.
Male: How would you like to taste my—
Female: I never ever say no to a taste.
Male: Try that.
Female: Alright. Mmm, delicious!
Male: Isn’t that delicious?
Female: Oh my gosh!
Male: It’s chunky and spicy and I promise you it will disappear in ten minutes flat at any party.
