Welcome back to another episode of fixmyrecipe.com. I'm Chef Billy Parisi and I cannot tell you how excited I'm today. I get to make Pecan Pie probably my favorite dessert of all time. The recipe come from Patty Frankhoski of Cleveland, Ohio. She doesn't necessarily dislike her recipe and she is not in love with it, she asked if I could kind of kick it up a nudge. Don't worry Patty; I'm going to do just that.
First thing we need to do is make our crust. I have an awesome recipe for pie dough. First, let's add our flour, sugar of course for a little sweetness and a pinch of salt. We're going to add a lot of butter and a lot fat here. Remember fat equals flavor and moisture. Here is a trick to get rid of that Crisco and use some bacon fat. Cook on some bacon, render the fat put it to the side and keep it nice and cool. The great thing about that is, you get to eat bacon.
Now, we just simply want a cut in our fat. Now that our fat is cutting, we're going to slowly drizzle in very cold water. Be sure to take some time in between drizzling your water in and cutting it in. You may need to take your dough out of the bowl and onto your cutting board and then work in a little bit towards the perfect consistency.
Alright! Our dough looks good, this recipe is enough for two shells, so I'm going to cut it in a half and roll out the other.
Now that our pie crust is nice and rolled out, before we put it in our pie tin we need to spray it with our little palm. Alright, just simple, we'll fold this over. Be ever so gentle, put it right there in the middle, fold it over, beautiful. Oh! Yeah. Awesome! It's perfect, looks lovely.
Okay. Now we simply want to dug the outside crust which is the fork. I have absolutely no clue what this really does but I can imagine it's all for show. Okay, Patty I show you a quick trick with the crust using some bacon fat. Now I'm going to show you how to add a little chocolate in your pecan pie.
First let's mix our eggs. Sugar, of course, some brown sugar and some corn syrup, may have use a spatula to get all it out. Also, I am going to add a pinch of salt here. You don't want any chunks of brown sugar in here, so make sure you whip it, so it's nice and smooth
Patty, now that our all mixture is beaten, our shell is done, let's add it all into our Pie crust, pop it in the oven. Put our Pecan pieces everywhere, of course, you have to put all these pecan pie. Okay. And of course, a little more enhancement, add some chocolate chips in there for a chocolate pecan pie.
Now that everything is together, we're going to pop it in the oven on 375 for about 50-60 minutes or until it settles. Oh! There is a God. Patty, take a look at that. How awesome is that, don't worry once you cool it, it's going to drop down a little bit. Okay. I know it looks kind of large, once you cool it, it will settle.
I can't even now it's way to way what, oh, it takes about 30 minutes to cool or so in the refrigerator. Remember, you want to enhance a little bit, hid it with some bacon fat in the crust that is all the flavor in the roll, it doesn't get any better than bacon. Also put a little chocolate chips in there, it's going to add a lot of flavor, chocolate is awesome.
