Caroline McCann: You have probably noticed that I'm a cheese lover. You know putting together a cheese tray, looks like it takes a whole lot of time, but the reality is, it's so simple and it only takes a few minutes.
One of my favorite is, the Pot Luck Cheese tray. For this, you need three different kinds of cheeses of varying flavors and textures. I'm using Canadian Swiss, which has a really nutty flavor, slightly tangy and then has those famous holes we are used to. Also, I'm using Canadian Monterey Jack, a great cheese that varies from mild to strong, depending on how long it's been aged for and also Canadian Friulano, which is a very mild cheese that absorbs all the flavors very well.
In fact, I love Canadian Friulano so much, that I'm going to show you a great way to use it in your Pot Luck Platter by marinating it into a Mediterranean dressing. For this, we need cubed friulano, which is a great cheese. Put them in a bowl; we are going to add a splash of olive oil just a little bit, a little bit of Balsamic vinegar, some dried oregano for flavor and then some roasted red peppers. You could cut them in a ribbons or you can also cut them in chunks like this.
Some crushed garlic for flavor, some olives for saltiness and a secret ingredient is a little bit of hot chili flakes. All you need to do, toss it together and you have your marinate.
Now, I call this a Pot Luck Platter because you can personalize it with things that friends bring to your party, like Olive Tapenade or sun dried tomato or if they bring salsa, just add some fresh cilantro into it. And don't forget our delicious Canadian Friulano that we've made before with a Mediterranean dressing, some roasted almonds or toasted pine nuts is a great addition as well and of course, our delicious Canadian Monterey Jack, our Canadian Friulano; and then Canadian Swiss with it's nutty flavor and all you need left is a few crackers, a few baked nachos is a great addition as well.
