Thanks for checking out another episode of FixMyRecipe.com, Chef Billy Parisi here. Our new fix goes to Anna from -- Anna, you forgot to tell us where are you from. There is a little box on our page that says, City and State, you need to fill that out so all your friends will see this video was actually for you. She submitted a recipe for a red velvet cocoa cake. She says it keeps coming up dry. Don't worry Anna, we've got your fix right here.
Anna, usually when I want to moisten up cakes, I'll use yogurt and/or vegetable oil. I've got a really cool secret from an old friend that you are just going to absolutely love. Anna, let's start creaming our butter, sugar, and our vanilla. It takes about six or seven minutes to completely cream our butter and sugar. Now we simply want to replace our pedal attachment with our whisk, then, stir in our eggs and food coloring till they are very well mixed.
Well, our butter-sugar mixer is mixing. We need to mix together our flour, salt, and of course, our cocoa. A guy that I went to cook with in Saint Louis showed me this really cool trick to moisten up any cake, one packet of jello. I'm going to use chocolate, because it goes perfect with our velvet cocoa cake. Alright Anna, now we need to ultimately mix in our flour mixture and our buttermilk until it is completely combined.
Don't forget to add our baking soda to our vinegar. We're just going to stir that in real nice. Then, we're going to add it right to our cake-batter mixture. Before we pour our batter in, don't forget to grease and flour up our 9-inch cake pans. Don't forget to evenly distribute our batter here. Instead of putting it on 350 degrees, we're going to do 325 degrees and come back and visit it in about 40-50 minutes. Anna, while our cake is in the oven, we need to make this cream cheese frosting.
If you want to know how to do this, and the exact recipe, check out my Care Cake video. Oh! Yeah, it looks great. You can already see and feel how moist it is. We're going to let this cool. We're going to put our awesome cream cheese filling on. Alright, don't forget to cut off the edges there to make it nice and flat. Then we're going to put on our cream cheese frosting and ice this bad boy up.
Anna, this is so moist, use that secret, put in that jello packet, that is a world of difference. Anna, thank you so much for writing this in. The flavor, this thing is unbelievable, and the moistness, it's everything you were looking for. Come back tomorrow. See our new feature fix of the day.
