Thanks for watching Fix My Recipe on WSOCTV.com. I’m Chef Billy Parisi and our new meal solution recipe brought to you by Lowe’s foods is sauteed shrimps scampi with a tomato and cucumber salad right on the side.
We got a lot of North Carolina shrimp here so let's go ahead and peel this already deveined shrimp. We’re going to get a skillet nice and hot. We’re going to add in some chopped garlic and don’t forget, when you smell it. It's done and at that point, we’re going to add in our shrimp. Make sure that skillet is real hot because that shrimp hold so much water and you want to make sure it cooks it all out.
Next, we’re going to squeeze in some lemon juice. We’re going to finish with parsley. We’re going to adjust the season with little salt and pepper. Let it cook and in the meantime, we’re going to make a tomato and cucumber salad. So go ahead and slice our cherry tomatoes in half. We’re going to peel this cucumber, slice it up, make a quick vinaigrette then we are going to try this out.
