I’m Cheryl Forberg, author of Positively Ageless. True beauty comes from within and nothing prove that
more than healthy glowing skin. A diet that’s rich in antioxidants, lean dairy and omega 3 rich foods can
help you feel better and look better. Today, I’m going to show you a recipe that can do both. We’re
going to be making something called southwestern salmon burgers. First we’re going to start with some
extra virgin olive oil. First ingredient being very rich in antioxidants and omega 3 and add a half a cup of
chopped yellow onion. We’re going to saute these for a few minutes until they soften and just start to
brown. Instead of using breadcrumbs and remember we’re not using any white stuff. No white flour,
no white pasta, we’re focusing on whole grains and so I’m going to use a couple of corn tortillas in place
of a breadcrumb.
And I’m going to tear this up and put them in the food processor until they’ve turned into crumbs.
Okay, perfect, so add these to your onions and now I’m going to add some salmon so I have a pound of
salmon here, beautiful omega 3 rich salmon. Just want to chop this up a little bit but not too fine, this
looks perfect. Now I’m going to add the remaining ingredients, I have a fourth cup of barbeque sauce,
pour that right in, three tablespoons of chopped cilantro, teaspoon of horseradish, a teaspoon of Dijon
mustard and last but not least, I’m going to add a tablespoon of fresh squeezed lime juice but I’m not
just going to use the juice from this lime, I’m also adding the zest. The zest is from the outermost part of
the peel. You don’t want the white stuff. You just want the colored area and I’m going to add that to
the mix. Now, I’m just going to put this in fridge for about an hour to let the flavors meld before we
cook them.
We’re ready to make these into burgers so I’m going to divide this mixture in fours because we’re going
to make four burgers so we’re going to put it in our nonstick pan over medium high heat and add a little
olive oil cooking spray. These will need about three to four minutes on each side. So I’m going to serve
the salmon burgers on a nice wholegrain bun, just loaded with fiber and antioxidants and adding
toppings like sliced tomatoes, lettuce, onion and add five grams of fiber to your sandwich and heaven
knows where most of us aren’t getting enough of that so be sure to be generous and put out lots of the
other condiments that you can add. So in addition to tasting great, these are all the foods that you need
