I'm Restaurant Girl and something I've been saying in even most elegant of restaurants is retro desserts anything from upside down pineapple cake to prophase to ice cream sandwiches. Cookies that I like to use are anything from Ginger Snaps in the store. They're not elegant, they don’t have to be, chocolate wafers which everybody loves and they also make a good crumble for the outside. We love this cookie those or cookies that are like tall house, you know, pre-prepared and you pop them on the oven, throw them on the freezer so they get a little hard so that they don’t break when you're making a cookie sandwich.
And we can even use my favorite cookie in the whole world Girl Scout cookies, they are in the mince the cookie of all cookies. So we’re going to use regular old chocolate chip cookies and we can use any ice cream you have in the freezer, any ice cream you like chocolate, vanilla. I'm going to grab vanilla so we can just make a standard cookie sandwich we are going to scoop out the ice cream. Now we actually don’t want our ice cream which to be too soft because we are going to smooch down so we need it to mold with us a little and we don’t want it to run over the edges.
Again, we treat it like icing. Make sure it’s even, pop another one on top. We already have a cookie sandwich but we’re not going to stop there. We are really just going to get them in there, squeeze it down a little and make sure we get all the ice cream covered. We are going to throw it in, a little plastic wrap over which is where I keep my surround wrap because it comes off so much better when it is frozen. Look on much better than this.
Voila, how pretty is that! Stick it in ten minutes just with all start and molds together. It’s not too soft, too squishy because we just soften that a little bit with our spoon and leaving it out a little bit and we’re good to go. Here's the bunch that I've already done. We've got our chocolate wafer with I think they have cookie dough ice cream when I just want it to be a little crazy and creative and I've wrap it around in rainbow sprinkles. I did my thin mint with the appropriate mint chip ice cream in there. I did Ginger Snap with butter be can and I rolled it in chocolate chips, many chips.
And then the one that we just made chocolate chip cookie then traditional vanilla ice cream and I rolled it in many chips and it’s ready to go and it looks delicious if I do say so myself. Go make one. It’s amazing, it’s really amazing.
