Today, I’m making that orange and carrot gelatin salad. This is a great refreshing salad for summertime. I’m handing a package of unflavored gelatin which only has five calories and no carbohydrates.
Today I will add a fourth a cup of water as well as fourth of a teaspoon of salt and a fourth of a cup of sugar. Stir that. I’m adding a cup of pineapple juice that I will drain from the pineapple can and we’ll put it into the microwave and heat it up for about two minutes. Okay the pineapple juice is—it has come to a boil actually and now I’ll place it into the mixture and once again stir a little bit. We’re stirring to make sure that all of your gelatin is dissolved. The heat of the pineapple juice will help to dissolve that gelatin.
Now we can add a half of cup of orange juice and a fourth of a cup of lemon juice. Now just place this mixture into refrigerator. While the gelatin is setting up in the refrigerator, next we want to grate carrots. The easiest way is to take your cup and then we’re going to have a cup of grated carrots. Place the cup down and if you have a small grated as I do then you can just place it right on top of that and grate right into the cup. We will be using one cup of chop oranges in this recipe. I found the best way to peel an orange is to cut off both ends and then score it from top to bottom all the way around or about three four seven inch part. It’s easy just to take your thumb and this pulls off very, very easily to expose your orange.
Once the orange is in section and I’ll just take a small section here, we can begin to just cut it up into very small pieces. I pulled the gelatin mixture from the refrigerator and you can see that it is thickened up just nicely. You took about an hour and a half to two hours for that to happen. To this I’m adding one cup of shredded carrots that we shredded before. One cup of the chopped oranges and pineapple that crushed pineapple from that can of pineapple. We just need to mix all this together and then the last step will be to put it into the extra mold.
Okay let’s put this back in our refrigerator. We just took the gel out of the refrigerator again and it’s now set. It took about an hour. I’m placing it into a pan of warm water, that will wait the bottom of my gelatin salad will be loosened and come out of the mold very easily. Another thing we could do is just take on a kitchen knife and just go right around the edge. Take a really thickly flat plate. Place it on top and get it nice and even and I’m going to flip it over. Oh one I can hear it coming down.
And there it goes, perfectly. Hmm most warm up today and this taste wonderful.
