Host: Welcome back to Better Bites. Hi everybody coming up next gets ahead with those credit cards bills plus cleans your house without cleaning out your wallet. But right now it’s time for Texas style cooking we’re whip some delicious fish tacos and guacamole of course with a twist. It’s all today at Better Bites.
Deep in the heart of New York village there’s a little taste of Texas Marfa NYC is more than 1800 miles from its west Texas name sake, but its serve up delicious authentic Texan Mexican meal everyday.
Host: We had to the kitchen together lesson from Chef Tony Cruz and first up are Marfa’s famous guacamole.
Chef Tony Cruz: Since I start working here every order we get is first thing is guacamole.
Host: For best guacamole Tony said you need the best avocados. So take care when you pick them out to store.
Chef Tony Cruz: They kind the little really green if it’s not green at all because guacamole will not come out ripe. So you going to look and pick over here. If you see its green then the avocados are very good. Sometimes its black the avocados are really no more get a change it.
Host: Cut the avocados in have and take out the pick and scoop it into you bowl. Next add you ingredients.
Chef Tony Cruz: Jalapeños, we use our red onions we use dice tomato slice, cilantro, sizzle it a little salt to taste, black pepper and a little bit lime juice. So just mix it all together. Try not to work over the, with the guacamole because sometimes it very come out black and takes like probably two minutes to do it.
Host: Now add Martha’s secret ingredients, a dash of Tabasco sauce and serve it with corn tortillas chips. You should try it, and now its time for the main event delicious baha fish tacos.
Chef Tony Cruz: We’re using this beautiful cat fish. Just cut in 2 inches thick.
Host: Season the fish and dip in to egg wash and then next in flour and fry it up.
Chef Tony Cruz: Two minute more in there 375 degrees.
Host: In the mean time take you flour and tortillas and heat them on the grill.
Chef Tony Cruz: See how beautiful it comes out.
Host: Now add your condiments.
Chef Tony Cruz: We’re going to put a little bit of guacamole in there.
Host: Fish tacos also great with Cinco de Mayo in Mexican coleslaw.
Chef Tony Cruz: This is jalapenos in there, lime juice and a little touch of vinegar. Why vinegar?
Host: Ok, now its time to get your fish.
Chef Tony Cruz: Put in a towel so it can squeeze the grease, that’s beautiful it is and they don’t break so use a cat fish and a lot of meat in there.
Host: And for a little added kick, Tony tops the tacos and a sauce made from Serrano peppers.
Chef Tony Cruz: Serrano peppers are more flavored spicier.
Host: Finally fold them up the serve to your guest. It’s a delicious flavored meal cooked in just minutes.
