Speaker: I am here with Dana from Heron Hill Winery and he is going to tell us about some of his dessert wine.
Dana: Recently at the Late Harvest wine, again it's 10% residual sugar, nice balance of fruit, sugar and acidity. Well it's 10% of the residual sugar, so that we get that wine consistency, which is you know, when they get up to 22-23% and more than served in the glass. Well the 10% again it's still wine consistency, it's still a lot of flavors. So that looks nice about the Late Harvest. The difference between the Late Harvest and maybe a ice wine, Late Harvest is picks later in the season, whereas ice wines are actually picked.
Speaker: Yeah.
Dana: So it's a little extra residual sugar than medium.
Speaker: What we do serve with it, as far as like a dessert.
Dana: Actually we serve with chocolate, actually it's really nice that you can do like drink it with a little piece of chocolate, you take a little sip of wine and then eat the chocolate, and then finish it with wine, and it actually compensates with the sugar, flavors well and actually doesn't seem to be as sweet as it usually is. Any kind of tart, any tarts or fruits like that, really anything chocolate obviously. Next we will make the drink Martini, do I got that favorite Martini and do feature mango vodka and shot of each of mango vodka and then there are like two parts of this and then if you really want you can cut it with little white peaches again, perfect Martini.
