Dan: Hi! I am Dan. Welcome back to my kitchen. I was just dying to have some wine and cheese. I have a friend Sara who also loves wine and cheese and she knows a little bit more than I do. We actually have a collection of three different types of cheeses that are actually very, very different. Sara, perhaps you could tell us about the Manchego.
Sara: Well, first we have Manchego and you can tell us a Manchego by the rind which is you can see the cross hatching that's from the press.
Dan: Did you know that Manchego is the number cheese export out of Spain?
Sara: Really?
Dan: Also it's very good for a grilling and baking.
Sara: Great! and I think it does go really well with apples and fruits. They are hard fruits that have strong taste. That's why pair Manchego with a strong red wine. That's really interesting. Tonight what we are going to do is we are going to pair the Manchego with this Italian Sirah which has a really great flavor. We opened the wine a little while ago to let it breathe but now we are going to drink it and have some cheese.
Dan: It's served at room temperature. Correct?
Sara: Correct.
Dan: Alright. So now we get to talk about the sheep's milk. What can you tell me about it?
Sara: Well, this particular sheep's milk is made in New York State, so it's local. And sheep's milk cheese generally has a higher fat content than cow's milk cheese. But it's very rich and it's flavorful. That's why we eat it with red wine because it's nice complimentary. It's balanced and why don't we have a --
Dan: Yeah, let's try some.
Sara: Yeah, let's have a little of that. Thank you Dan.

Sara: Thank you. Shall we cheers our cheese?
Dan: I think that that's the only sophisticated thing to do.
Sara: That was delicious.
Dan: It was wonderful.

Dan: Yeah, and actually tomorrow when we are having three other cheeses and several other wines and a couple of cases of beer, and some champaign.
