How to Peel a Tomato
To remove the skins from tomatoes, it’s important to use ripe but firmed tomatoes. First,
remove the core from the tomatoes and then make a small x on the bottom. Now, bring a
pot of water to a boil and then prepare an ice bath. Add the tomatoes, no more than two
or three at a time and blanch them for about 15 to 25 seconds to loosen the skin.
The skin should just begin to split and peel around the edges. Now, using a spotter,
remove them and plunge them into the ice bath to cool completely. Then, use a paring
knife to peel off the skin starting at the x.
If it doesn’t release, plunge back into the boiling water for another 10 seconds or so, then
cool and peel. They should be enough to peel but not be cooked. Peeling the skin from
tomatoes is important for certain dishes, because when cooked, the skins fall off leaving
bits of skin in the dish which are not very nice to eat.
This method also works well for peeling peaches and plums.
