So the first that we’re going to do is take the red onion. First, you just cut it in half and then we’re going to julienne it. Julienne means just cutting in nice long strips. So just like that. So, I just want to see. So, I’m just going to put those again on a plate. In this salad, if everything is prepped and cut it takes no time at all. Just to show you how I did the cucumber. I'm going to cut it in a half, take a spoon and just spoon the inside or scoop the inside out, so you don’t want any of that in there.
You can use an English cucumber, but the regular cucumber is fine. So, just whatever you prefer, and then again, julienne strips, nice long strips because if you take these two together it looks nice. You know what I mean and I just cut the ends off for no waste. I mean you can use the end, but I cut them off so everything looks nice and some of big presentation gap.
So, we’re going to take your cucumbers and start mixing everything. Cucumbers, onions, more cucumbers, I'm going to take some apples, just about half of that. That was about a cup and a half of the apples. Then we’re going to take some Feta cheese and some tomatoes. Now these tomatoes are Roman tomatoes. I cut them in a half and I cut them in quarters and I cut quarters in half, that’s how we got these little pieces right there.
Then to make the dressing, we’re going to take the Humus that was already made, put it on a bowl about two or three teaspoons. Then what we’re going to do is add a little bit of red wine vinegar. What I want to do with this is to just make it loose like that, see, so I'm going to add a little more of red wine vinegar some garlic and a little Humus, so four tablespoon. Okay, that’s perfect.
And then what we’re going to do is take this extra virgin olive oil, and we’re just going to go. So nice and slow, so it’s emulsifying. What it means is it’s making a dressing stronger. It’s taking all that oil in it to making it thicker. So that’s perfect.
Then, what we’re going to do is mix this up. Then we’re going to start plating this right there. So, everything is mixed. I'm going to top with some candy walnuts after, see how little this nice colors. If you want to you can add some chicken, some shrimp, some jarred meat you know, whatever you like.
Then, I'm going to take some more apples and then some candy walnuts to finish it up. This is like the great serving to that gravy on Sunday. And then last thing, some balsamic reduction and all I did was put this on the pan and just reduce it and that’s a nice, serve it like that. And there you go some fresh cucumber salad with tomatoes toasted walnuts, onions, apples, tomatoes and a Humus, base dressing, Humus Vinaigrette with the balsamic reduction on top. Enjoy.
