Today, I’m going to introduce you to a Thai fruit called ka-noon or jackfruit. It is sweet, fibrous fruit with a strong smell. Every home in Thailand has a jackfruit tree in the back of their house. The reason is that ‘noon’ means support in Thai so you need someone behind you to support you. If it’s the right season, summertime, you may be able to find it in the Asian food store.
Now, I’m going to give you some tips how to pick a good jackfruit. First is smell. The jackfruit gives off a strong smell. If you can’t smell it, it’s not ripe yet. It’s ready. Second the feel. The jackfruit should be slightly soft but not to squishy. If it’s too squishy, it’s too ripe. It’s ready.
As you can see, the fruit itself is huge. So, you need to be cutting it to small pieces to eat. They may do this for you at the store or you can cut on your own. First, the jackfruit is very sticky and sap is a lot like glue. So you need to put some paper or plastic down before you cut it. You also need to coat your knife in oil or your knife will get really sticky. Use a big knife and cut the jackfruit in half, and then half again and then half one more time. Now, cut out the core. Soak up the sap with a paper towel. The fruit is large, yellow and look a bit like huge corn kernel. This is the part you’ll eat.
It’s a lot of work, but jackfruit is very good. I think it is best when it is cold so put in the fridge a bit to chill and enjoy!
