How to Shape Gnocchi Dough
Hi. I’m Claudio Zroloni from Il Fornio and today we’re going to show you how to make Gnocchi.
Now, we are getting ready to shape our gnocchi. We have our dough here and we’re going to roll in the beginning to make a nice big roll of gnocchi after we sprinkle some flour on the gnocchi, using a spatula, we’re going to cut a little square of the gnocchi and we’re going to turn it like at least and see here the gnocchi is nice and smooth in size and working on the clean surface it must be clean with no flour at all.
And using the palm of your hand, you’re going to turn it up and down, up and down and you going to shape the ravioli the gnocchi in little cylinder. Little by little you shape everything. You have to work really fast because the dough is getting humidity out and gnocchi is getting softer and it’s going to work. So, you make a little bit of the roll to sprinkle some more flour on top and that’s it make everything really nice.
And after you cut it like finger wide and that’s it and you have some gnocchi and you go on like this making all your dough like that. Always shaping from — moving your palm of your hands on the cylinder of potato, shape all the same like this. It’s important that everything has the same shape. It’s very easy, you just need to some practice. Put some more flour and really important to put to the flour to prevent the gnocchi from sticking together one way or another and it’s like this.
You can go slower than that. Now, you have all your gnocchi and that’s the last step. Take a cheese grater like this, you turn it, you grab a gnocchi and that’s it. This is really important because here you make a rough and here you have a little hole, so the sauce is going side, is going to stick on gnocchi. So, you have to do everything like this for gnocchi and after this, you’re going to get ready to cook our gnocchi in a salted boiling water. It has to be ready when gnocchi are ready. See you soon.
