But if you put the paper side down wouldn't that trap moisture between the old insulation and the new insulation?

i think you are off to a great start but there is a big problem here that is easily corrected, the gentleman in th e video has the kraft facing or paper side of the insulation facing up. without getting into a long explanation, flip it over. yuo always want the paper facing or vapor barrier on the side that is warm in winter, or up against the drywall of the living area, so flip it over.
