Today’s cooking tip is grilling with plank. Here is a piece of cedar wood, supposed to be a real good delicacy on the grill. I have never done it before. So, we are going to do it together for the first time.
Now, before you put this on the grill to cook on top of, you are going to have soak it in water for a while, anywhere from one hour to overnight. I have done this board overnight and I placed the sink grate over it so that it will flow to the top. Make sure it is completely saturated.
Now, after you are done soaking the wood in the water, you are going to pull it out and you are going to shake it off to make sure it is somewhat dry. You are going to place it on the grill for three to five minutes just by itself. Make sure the grill is turned up really hot.
Now, here is the next step, you are going to spread olive oil all over this. Okay, you are going to brush the whole wood before you put your fish on. Put some olive oil, okay, and I got two piece of cat fish here. We are going to get that on right now. See if there is any—skin side, no, there is no skin side, so we are just going to lay it on the thickest part. Put one part right there, put another piece, lay it right there, it is beautiful, that is beautiful. Let us see, make sure we get that with flames down a little bit. You are going to put this on low. You are not going to want to cook this on high. So we are going to leave that laying right there on that cedar and let us see if the flavor goes right into that fish. All right, we will check that in just a few minutes.
All right, so let us take a look at this, we have been cooking for few minutes. All right, you can see it is still not quite ready, but this piece of wood is smoking and you can smell all of that, all of those cedar smell just coming right off it. So, we are going to close this up again. We are going to give that time to cook altogether.
Now normally, I would put seasoning on the fish, butter and garlic and everything, but for this experiment, we do not want to put anything. Right now, I want to see how good the wood works and see if we can really taste the flavors.
So, we have been cooking this for about 15 minutes. Now, we are going to open this up and take a look and see if how we are doing. A little bit on the burn side in the corner there. There you go, a little bit over there, we are good.
Okay, I am saying this looks pretty good. Let us turn this off and take a pick here. Oh yes, look at all that, look at the moist there still, that is beautiful. You got to go to the thickest parts and basically just cut right into it. That is gorgeous. Pull that off before it cooks too much and becomes just too tough. I do not see this is just amazing. Wow! Look at that, that is just beautiful.
Let us taste the fish. Here is the real test, this is to see if the cedar wood works. We have applied no seasoning to this at all, none whatsoever other than the cedar wood, we cooked it for about 15 minutes. We did flipped it once and I also took a sneak bite, but let us taste it for the final try.
It is actually delicious. It is amazing, it is amazing that that wood that the flavorings all throughout here, it is awesome and so good.
Okay, so the result to this test is, basically, plank works great, 15 minutes of fish probably longer with chicken. Just keep it on your meat then we could flip it, but make sure you put the olive oil on there, 100% delicious, no seasoning added, cedar plank, awesome!
