How to make Chicken with Tomatoes in a Dutch Oven
Hey, how are you all doing? It’s “Cooking with Dave” once again, I’m Dave. And today I’m cooking in Dutch oven. I had somebody request that I cook a whole chicken in the Dutch oven. I said, “Sure, I like chicken. I like Dutch oven. I like chicken in Dutch oven because it is very, very good.”
So, we’re going to take the veggies of them. We’re going to cook the chicken in it. If you don’t have a Dutch oven you can use any pot to put the oven or you can use roasting pan. You just cover it up or you can just put this in the crock pot.
I think it’s far better in the crock pot or Dutch oven than the other way you cook the chicken slow. It could be long, fall apart, juicy, you cannot read it. It takes about an hour and a half around 45 minutes cooking in the Dutch oven and a crock pot probably will take four to five hours. Cook it until it’s tender, juicy, fall off the bone. I’m going to cook it with some tomatoes. If you want too you can use potatoes. I like tomatoes so I use them. I love tomatoes. Maybe it’s good for you but the lycopene in tomatoes everybody likes lycopene in their diet. It is good and it’s good for you.
Alright, I’m bringing over here. I’ll show you how to do it. Come in Dutch oven there I’m going to put it on about medium high because with this heat is going melt that butter. Okay, after our butter starts to melt I’m going for onions in there. I’m going to fill one whole chopped of onion right in the butter. You don’t want to you don’t have to use butter. You can use some olive oil or whatever you want. Just sweat your onions out.
I like to use little butter. Sometimes I use olive oil. Olive oil is getting so expensive. And as of you have known the difference between olive oil there’s in the real world good olive oil or just real, real bad olive oil. It doesn’t seem to be any in between, so if you want to buy good olive oil, it’s expensive. That’s what I’m saying.
Anyway, I put a whole chopped of onion about in my pan there, so I’ll sweat those onions out in the Dutch oven and get them in oil. I’m going to put about three tablespoons of garlic and there to onions we want garlic flavor in our saute. I like it sort of let in there to begin sweating out.
Now, I want my pan be pretty hot because I’ll have on medium high so I want to sear this chicken before I put into the oven and I want it to get brown in all sides, so almost right for that heat on top of the stove. Alright, onions and garlic in there, if you want too you can throw some peppers in there. We’ll rip up a bell pepper maybe. Maybe some cayenne peppers. I’m going to heat it with some salt and some pepper.
They got me a whole bird. I washed them off because something sticky right down there on that heat, so I can use some searing going on. Now, on top of them I will sprinkle a little cayenne and pepper additional flavor. Maybe I’ll heat it with a little bit of paprika, just a little bit on top there, and then I will heat it. You all know that I'm going to put some thyme and season it because it has been already.
I’m going to cook for a minute just to get some searing going on there lots of some juices in there and I want to flip it over and do it again, carve on all sides and then I’ll put the lid on it and stick it on the oven. I will cook it slow. I’m going to get my colander. We will cook it about an hour and a half until it’s just tender juicy, fall off the bone and then when it’s all done.
Now, I’m going to add about halfway cooking this time. I’ll take it out and we’re going to add some tomatoes to it if you want too you can add some potatoes or whatever you’d like to eat. You could put celery in there. You could put peppers or whatever you like. Put vegetables in there. I like some tomatoes. I like potatoes but today I’m going to use some tomatoes. I'm going to serve chicken with tomatoes on top of some rice. It’s going to be good.
So I give this thing a flip. It’s so cool on top so I can still grab it and turn it over out of the bottom and we’re going to do the same thing on this side. We’re going to heat it with a cayenne a little bit. There’s my oven heated up. It’s ready to go 400 degrees with paprika and some seasoning.
Okay, and then now I will lay it down the back side down. If you want to you can put it breast side down. If you put it breast side down it helps press some more moist. I like the breast side up.
Now, if you want too at this time you can see I’m ready to go in the crock pot. Take all of these to onions and juice everything, put into our crock pot to cook you know, four to five hours in crock pot until it’s tender and juicy and ready to go and before it miss the same thing. Put this in the oven and then I’ll take it out. We’re going to drain the juice off add some tomatoes. Put it back in the oven. Cook it a little longer and we’ll take a look at it and see what we have.
Alright, I just took my chicken out of the oven. We can take a look at it. See, how it’s doing. It looks like it’s doing good. I poke it with a fork that going that it gets tender. Get down on there, so now what we’ve done but we haven’t done juice yet. I want to add my tomatoes before I get all of it done. I’ve been cooking about 45 – 50 minutes 400 degrees and this is pretty much done, so I can go on to drain the juice off it and then add my tomatoes.
And I’m going to add chicken. Fortunately I have these cans or just some Hunt’s diced tomatoes. I like tomatoes. I like tomatoes. They are good and they are good for you but it is better for you if they are cooked. I can spread them around always on top. Put them like that. I will put lid on this bad boy. I will stick it back in the oven and turn to cook it another probably in 30 minutes 45 minutes we’ll see. I will mix some rice to go with it. It’s going to be good.
Okay, I stick it up in the oven. I’ve been cooking about another 45 minutes just take the lid off, take a look it’s always good, look at that. Alright, here we are back in the Dutch oven. I like to see this a little while I’m just finishing up my rice and man it is looking wonderful. I want to take this on at breast meat right there. Turn on my rice. Get me a leg out of there. We’ll fry action, I like tomatoes. Tomatoes are good for you, lycopene up in the tomato. It gives some lycopene up on you. It’s good for you. How can you go wrong? Tomatoes, chicken and rice, that’s what I call dinner and that’s what we call damn if you this. Dinner is good. Dinner was over. Dinner is over and yet dinner was good. You’ve got to catch on the bone but it can’t get onto you, alright.
So, just go over there. Okay, men that’s good chicken. I’ll tell you right now. The tomatoes in there and the rice they are so wonderful. Tomatoes are good, good on this chicken. You’re going to like this while I cook this in Dutch oven or on a crock pot or any kind of pot. You’ll put in the oven. You’ll like it. It’s good. It’s good for you, tomatoes and chicken.
