Hi! I am Dean. Today, we are going to be making Polish Coffee Cake. For today, we need to remember the simple hints. WASH; W stands for wash your hands, utensils and food, and A stands for ask permission from an adult. S stands for straightening up your work space and H stands for just to have fun. Alright, so now, we are going to dump one-and-a-fourth of a cup of warm water into a bowl and we will put two packets of active dry yeast and right now, before the yeast has activated, it's going to look all crummy and grainy and wet, this is because, it needs to feed off of sugar and a warm space with warm water.
So, now I am also going to put one teaspoon of sugar, so it can eat. Now, I am going to stir this up, get it all, nice and mixed up. If you want, you can actually be like that for about a year so, I can grow and eat. Just kidding! Now it will take about 15 minutes. Now, we are going to bring over scalding milk. Now, scalding means just slightly, not boiled, but just before it boils. I am going to add in two sticks of butter and we chop this up, this butter up, so it all melt down a little bit easier.
Now, we are going to use a whisk, to kind of whisk this up, get all the butter melted down and we are going to put this aside. Now, we will crush six eggs into a large bowl. Now, we will whisk these up, make sure you get them all mixed up. Make sure there is no big old clumps of yolk. Now, we have a teaspoon of vanilla, put that in, and just make sure that it gets all mixed up. Alright, now we will set that aside, for we are going to bring this back and we are going to make sure all this butter is mixed up and melted. Now that all the butter is melted, we'll add our salt and nutmeg and sugar, a bowl of sugar.
So, now stir that up and make sure all the sugar isn't sticking to the bottom of the sides. Get all that sugar dissolved. Now that these are all dissolved, we will put this over here. I will bring this back and adding our yeast that see what it looks like now. Alright! So, add all that in and stir that up. Again, we'll get a good stir, make sure it's all are incorporated. Alright, so while I am stirring this up, we will now add in our milk-and-sugar mixture, put it all in. Alright! So now I'll stir right back up and you want to make sure that the milk isn't too hot, because have you ever had scrambled eggs before? Well, that's what it'll do to this if it's too hot.
So, we want to make sure it's not too hot and cooled off. This is what it looks like once we get it all mixed up. Alright, so once we have all this mixed up, we can set this aside and now I have seven cups of sifted flour already and by sifting it, we will give it a bit of an A feel to it. Alright, so I have to add just one more cup of flour to it and you don't want to patch the flour down, but you do want to level it. And by sifting it, it will help it not to be so clumpy. Alright, so I have gotten that. Alright, so now sift and I know this is just a strainer and all you have to do is shake it around. Make sure if there's some clumps in the bottom, then you just mesh them down.
Alright! So now we will add a little bit of this flour at a time. This is going to start to get stiff, it should. Alright, I am going to switch spoons, because this one is getting all clumpy and I don't want it to do that. So, over here, I am going to get a ladle spoon instead and this will work much better. So, this one is what it will look like now and now we will set the raisins in, put the raisins in. So, now I'll mix all the raisins up and like I said, don't over incorporate it. So, this looks good. Alright, so now we are going to have to put this damp towel over it, so it will rise better.
Now, we'll bring those over to food processor. So, now we will put in, like I said, a cup of powdered sugar, a cup of flour and butter. Pulse it till it's kind of a crumble. Look like that. So, now we are going to let the dough rise and I'll show you what we got to do next. So, now our dough has risen and this is the funniest part, but we get to punch it, only three or four times just do deflate it, one, two, three and four.
Alright, so now we are going to set this aside. This is going to make three rows. So now, we are going to pour our batter into them equally. So, now you are going to sprinkle this topping over it evenly. So we are done here and now I am going to cover these up with my towel damp and we are going to let these rise for about 20 minutes. Alright, so now these are risen and we will put them in our 350-degree oven. When you are cooking them, please get help from an adult and this is what it's going to look like when it's done. Now, you can see all the raisins in the inside and yes, it will crumble and yes, it is good.
