This recipe for country potato salad uses hard-cooked eggs and celery for added flavor and crunch.
First, in a full quart saucepot, add two pounds of peeled and cubed potatoes and cover with water.
Over high heat, bring it to a boil, then reduce the heat to low and simmer for 10 minutes or until tender, then drain and cool slightly.
Next, in a large bowl, combine half a cup of mayonnaise, one tablespoon of apple cider vinegar and eight of a teaspoon of ground black pepper, half a cup of thinly sliced celeries, half a cup of chopped red onion.
To peel the hard cooked eggs, roll then like this, then chop them and add to the dish.
Now, add a quarter cup of sweet relish and fold to blend all the flavors. Next, add the cooked potatoes and mix all the ingredients together, then season with salt and pepper.
This country-style potato salad is great as is, but if you like, sprinkle with some sliced celery and chives for added flavor and crunch.
