Eric Rochow: Hey everyone, it’s almost Christmas time here. And I wanted to talk about making a really simple cranberry relish or cranberry chutney or cranberry sauce; I am not quite sure what’s going to come out. But you know, so many times you just – it’s kind of an afterthought almost, the cranberry sauce for your dish, for your holidays, and I feel let’s just – let’s kind of play with this and see what happens?
Female Speaker: Let’s do an afterthought.
Eric Rochow: Garden Fork is about the happy accident and I think more people should just experiment rather than going from a recipe, I am kind of like, well, I kind of get a feel for stuff and then and see what happens, you know. So that’s we’re going to today, alright. There’s a bunch of snow outside, the pubs have been out, we’re suppose to get another storm, so we’re going stay inside and work and see what happens, alright.
Okay, we won so here we are. By the way, I was inspired to make kind of a cranberry thing from my neighbor Mardi who gave us these apples for the dish today so thank you Mardi. Mardi is really great and makes cookies and stuff and I was just happened to stop by.
Female Speaker: And dog biscuits.
Eric Rochow: And dog biscuits, yeah she made some very nice dog biscuits.
Female Speaker: Eric eating a dog biscuit.
Eric Rochow: They’re going to hurt the teeth.
Female Speaker: It won’t hurt, how is the cake? Do you think he swallow it?
Eric Rochow: Yeah, why not? If Mardi made it, it can’t be bad.
Female Speaker: That’s amazing.
Eric Rochow: Oh, they’re pretty good for dog biscuits. Lenin, I don’t know if you know this one, Lenin and I are really in this big kick about bees and we’re going to get at least two bee hives, sorry, in the spring. And we’ve been reading catalogs and books and stuff and this is what that’s really good. It’s a book of bees by Sue Hubbell and it’s about a women who is a bee keeper in the Ozarks and she drives around her truck and it’s kind of a neat story and also you learn about raising bees as well, I am more of the – I want to just read the book about how to raise bees and learns more about the story. So this is a great hybrid of those two things.
Female Speaker: The next issue is antworks.
Eric Rochow: Antworks. I think cranberry sauce is super easy to make, if I can make it you can make it. This is Eric’s version. We’re going to use one bag of these. I went through and we have some raisins, we have some figs, we’re going to put some apples in it and my secret ingredient is cumin, this is from the Food Coop. So it really kind of makes it a chutney rather than a sauce, I think that’s what makes it a chutney as a bit Indian spices in it so prove me wrong. But we’re just going to chop the salad and put it in a pot cooker.
Female Speaker: What are you going to do with it?
Eric Rochow: Then we’re going to give it to Mardi.
Female Speaker: What she can do with it?
Eric Rochow: Well it’s really good, it’s great on your holiday dinner, it’s great on turkey or chicken and it’s also just like a great spread if you wanted with apple or with a, I love it with cheese. But you know, it’s a holiday time and this is our last show of the year so I just want to show how I make this, it’s a regular cranberry sauce, just you know, bring it up a little bit here and make this, alright. So we’re just going to chop some apple, you can either use your apple core or this is a way to cut them if you don’t have that and then you take the core and it goes over here, and it goes like that.
Female Speaker: Bye Henry.
Eric Rochow: Oh by the way, Brooklyn kitchen which we went two for love, and we first had a casserole crazy thing there at the Brooklyn kitchen and they are giving knife classes, so I’m going to talk to them and see if we can have a knife class for Garden fork there, because I -- I am not really good with this, may be we could all learn something.
Female Speaker: Why do you need a knife class?
Eric Rochow: How to cut things with knives and how to take care of and all that kind of thing.
Female Speaker: It seems like what you’re using is different kind of knife if you would ask me, maybe if you want a nice school, you know.
Eric Rochow: Yeah, rinse your cranberries.
Female Speaker: You’re rinsing the cranberry?
Eric Rochow: Yes, that’s one of the great way to rinse them, pick up, some of them good like that one. Oh if forgot the key Eric ingredient, ginger, grate your ginger, we’re just going to cut little circles and then dice it up, smells great, we need to take a cup of sugar, it’s quite solid in here. Okay now to that, we are going to add the other secret ingredient, and using the ginger left is almost forgot, not unusual for Eric. But we’re going to put some cumin in, I really love cumin, I was listening to the Faith Middleton's radio show and they were talking about make sloppy joes and this guy makes them with cumin in it, and I mean I thought that was a great idea so we’re going to do that, alright. This looks like about a teaspoon.
Female Speaker: Just be careful with that Eric, it’s so powerful?
Eric Rochow: It’s not as powerful as you would think, so I’m going to put two teaspoons. So there’s our cumin, sugar, and now we’re going to add in all our chopped up ingredients here. Alright, now stir, I think this will take about, oh I forgot a couple of things.
Female Speaker: Water, you need some water?
Eric Rochow: I want a cup of water. So I want some — you want some kind of an acid, you can use lemon juice, maybe lime juice, I’m going to put a little apple cider vinegar in. That’s going to be about a quarter cup of cider vinegar. You want to just cook this down, you want to pay attention, you might need to add a little extra water but this will thicken up when the berries, the cranberries themselves start to break, it’ll thicken up. Here, I’ll stick my hand in there, see they don’t bite. Are you going to bite me?
Female Speaker: They are not fighters at home, oh wow.
Eric Rochow: Yeah it’s thickened up.
Female Speaker: It smells very vinegary.
Eric Rochow: Yes.
Female Speaker: Is that we want to select?
Eric Rochow: Maybe not, but it’s just happens. I am really went up the hot with the hot temperature stuff so. And that is really good.
Female Speaker: Seriously?
Eric Rochow: Yeah.
Female Speaker: I am just saying because it smells real vinegary in it.
Eric Rochow: Will you taste it Tommy? What do you think?
Female Speaker: it’s gorgeous.
Eric Rochow: Shaking your heads, yes. It is good.
Female Speaker: It is really good.
Eric Rochow: Alright, so there you go. That taste great. You maybe want to make the apple pieces a little smaller, this should really be good with, I think I’ve got some red wine and some turkey maybe more I am lame, or just with apples so.
