Julie Hasson: I’m Julie Hasson. Welcome to Everyday Dish Tv. Today we’re going to make an Easy Bean Salad that is not only really nutritious and good for you, but it’s delicious too. Now the recipe is from the cancer project and it comes out of this book of theirs and the cancer project is as incredible organization they are non-profit organization that’s dedicated to cancer prevention through education. So this book has all kinds of incredible healthy recipes for you and all kinds of nutrition information its great resource. So we are going to make this recipe from their cookbook today and it’s their easy bean salad and to begin with we are going to use can beans.
Now this is one of the great things about this recipe is that use can beans and so you can throw it together in under five minutes great for busy nights when you don’t feel like cooking. And we are going to be using black-eyed peas, pintos and kidneys and I always like to use organic beans whenever possible and these are from eaten and I really like the eaten organic and can beans there is no fat added, there is no salt, there is no preservatives, so its just a pure bean the great. And so what I’ve done is I’ve drained and rinsed each can and you want to do that because it just you know kindly has a metallic taste if you don’t mention really well. So they taste fresh if you do this.
So to began with we have got our pintos, which we have drained and rinsed. We are going to dump into the bowl, we have got black-eyed peas and this salad is a great way to get more fiber in your diet it’s really, really nutritious have you got our red kidney beans and so we just put all of the beans in the bowl but we also have is a chopped up red bell pepper it’s diced, so we are going to add that in and we are going to add half of a diced red onion. I mean really this recipe discussed together so quickly, but the flavors in this are incredible. We also have some frozen organic corn and again I really advocate using the organic products. So this is frozen organic corn that’s been thought we are going to add that and this is about a cup.
And then we have got some frozen I thought baby lima beans these are great they didn’t have to be cooked, I just let them far and they have a great flavor in texture that baby beans, so we are going to add the baby lima as in here and this is about a 10 ounce bag. Then what we are going to do is, we are going mix this together and look at all these beautiful colors, I mean to me this is a candida salad this really looks like an candida and I also like to bring the salad if I have to bring something to somebody’s house, they say, okay bring a salad or something. And it’s perfect because not at least all kinds of fresh flavors in here, but it’s different then just bringing a green salad and it’s usually the first thing to go. So everybody just runs and gravities and passed on their plate and it’s just delicious. Okay and then what we are going to do, we are going to add some low fat and vinegar to it and this is just balsamic vinegar and we are going to add half cup. But you could also make your own homemade if you wanted to you don’t have to use a bottled. But look for one that doesn’t have a lot of preservatives in it and doesn’t have dairy and there some really great salad dressings out there.
So we are going add that in and then also some salt and pepper. I always add freshly ground pepper to, and practically everything I make I add to. Okay, so we have some nice pepper there, okay we are going to adding some salt which is guessed nice flavor if you don’t do salad you don’t have to add it, but it really just add a little bit extra flavor to it and then you have got this incredible easy bean salad and you can serve for any meal of the day. But all I can tell you as its extremely delicious.
