Welcome to Food Done Right. I’m Barry and today, I’m going to be showing you how to make a Fettuccini Alfredo. We’re going to make it from scratch. It seems like it could be really hard to do but it’s actually really, really easy.
First I just need to get some garlic here. I’m going to chop it up really fine. Fettuccini Alfredo is pretty just much parmesan cheese, heavy cream, and garlic. I mean that’s your Alfredo sauce. And then the Fettuccini is just the tough pasta you use. You can use another kind of pasta but everybody knows Fettuccini, so we’re going to sue Fettuccini Alfredo.
Today, we’re also going to put shrimp to make it a little bit more interesting. So what I’m going to do first is sauté the shrimp, and then we’ll make the sauce around the shrimp so you have all the flavor on the shrimp, and your sauce to go with your pasta. So I got my garlic chopped up nice. I’ll get my pan hot. We’ll get some olive oil in here.
Ok so first I’m going to start with a little olive oil on pan. I’m going to add my shrimp to get them all cooked. We cook the shrimp first. Season them with salt and pepper. Turn them over. Again, since we’re making the sauce around it, we don’t want to, we don’t have to cook the shrimp all the way through right away, because you’re going to be cooking them constantly. So then, I’ve chopped up some garlic, add them all. Put some butter. Shrimp, butter and the garlic, it’s creamy a little bit. Get that really hot, and then deglaze it with white wine. White wine here. White wine is just for flavor. Let it cook down a bit.
Also with our Fettuccini, to give it some more flavor, I’m going to use some cherry tomatoes, slice this in half and I’m going to do portable mushrooms in there also. Just slice this in half, it should be enough. And then now the portable mushroom, you don’t need the stem. Take the stem off. They’re kind of big so I’m going to cut it in half, and then I’m going to slice it really thin. Ok, the mushroom, I’m going to throw in right now. It’ going to take a little bit longer to cook. The tomatoes I’m going to wait until the end to throw in. Put these in right now.
So what we’re doing is making everything in one pot. So we call it one pot cooking, which is always believed beneficial because you don’t dirty a bunch of pots. It’s just one pot. So we’re going to do everything in one pot.
Ok, next, cream, add the heavy cream. It’s just a little thing I haven’t whipped it with every whipping cream. That’s where the Alfredo comes from, from a cream. Just add the whole thing. Stir it around. Give it a little taste. Make sure it’s easy nice to go. It’s good. Ok, now I’m going to add the tomatoes. I’m going to cut more of these. So since this is going, I’m going to get my pasta going. It’s almost ready.
So for this, Fettuccini, if you use fresh pasta, it’s always better. And this one takes a few minutes to cook. So I’ve got my boiling water. I should always salt that water, which I didn’t do yet. It gives you a little bit more flavor in your pasta. Put that in. That will be done in about three to five minutes. By that time, the sauce will be ready to go.
Ok, our sauce is about ready. The pasta is about ready. You can see we’ve just let this boil, it will take enough as it goes, which is nice. Also something to help thicken it up and for more flavor, Parmesan cheese, just put that right in there. You can mix your pasta with your sauce if you like. But for this, what I’m going to do is just plate the pasta and then throw the sauce on top, so you can see everything.
We’ll get my bowl here. Simple pasta right out so it’s ready to go. Now fresh pasta cooks way faster than the hard pasta. So it makes that, takes up three to five minutes and it’s done. So then we have our Alfredo sauce with shrimp, mushrooms and tomatoes. Get some shrimp in there, some mushrooms and the sauce right on top. Clean up my plate, and then of course, some Parmesan cheese on top. There you go. There is your fast, easy dish.
