How to make Gazpacho

Ingredients and Quantities
1 cup of stale french bread, cubed
3 cups of tomato, diced
2/3 cup of green pepper, diced
2/3 cup of cucumber, peeled, seeded and diced
1/3 cup of red onion, diced
2 garlic cloves, minced
1 1/2 cup of tomato juice
2 tbsp of extra virgin olive oil
2 tbsp of red wine vinegar
hot pepper sauce, to taste
salt and pepper, to taste
Directions
1. In a cup, add the french bread and cover with water. Let stand for about 5 minutes and then squeeze out the water and add to a food processor.
2. To the food processor, add the tomato, green pepper, cucumber, red onion, and garlic.
3. Processes until the mixture becomes a coarse puree.
4. Pour the mixture into a bowl and stir in the tomato juice, olive oil, red wine vinegar, hot pepper sauce, and salt and pepper to taste.
5. Mix and serve.
