Ani Phyo: Hi, thanks for joining me here today. My name is Ani Phyo and I am the author of Ani’s Raw Food Kitchen. And today, I am going to show you how to make a delicious Lucuma flavored ice kream. Lucuma really taste a lot like caramel and as a low glycemic sweetener, I am using Yacon syrup rather than agave. It actually has about a third the calories of agave and it has about a half of the amount of sugars. So, I am going to start with our main flavor ingredient, which is Lucuma. And lucuma is a root plant that is dried and ground down. The next ingredient is going to be whole, raw, fresh cashews, and I’ll put that into our high-speed blender. You’re going to want to use the high-speed blender to really get this thing smooth and really blend it together really well. You don’t want to use that much water because when we’re freezing it, and the more water that goes in, the more crystally it will get when it freezes. And if you actually follow these proportions in my recipe, you’ll find that the ice kream will just stay kreamy all the time in your freezer.
So, the next ingredient for flavor is going to be vanilla extract, you can use a vanilla bean that is really delicious as well. I am just using vanilla extract for ease because I am lazy today. And then the sweetener, this is a really delicious sweetener and its Yacon syrup; the only place that I found this, I discovered it from Navitas Naturals. They have great ingredients; actually the Lucuma powder is also from Navitas Naturals. And this Yacon syrup is actually from the Yacon plant and it has about half of the amount of sugar and about a third of the amount of calories of agave syrup, it’s extremely low glycemic. Also the Lucuma is also a low glycemic sweetener as well. So, I’m just going to put all my ingredients into my high-speed blender and then I’m going add my water and blend until its smooth. And that’s it.
Then I’m going to blend this. You just want to keep it blending until its blended smooth and that is it. So, now with this delicious, rich kream, you can pour it into a container and then place it into your freezer, ideally overnight and by morning it’ll be frozen and it’ll be a delicious, rich ice kream that taste like caramel, which is actually Lucuma and Yacon syrup. And so, what you will get is this beautiful ice kream and it looks like caramel and it tastes so good. I’m actually going to taste some. Yum, it’s so kreamy too. Um!
