Speaker: Mediterranean tuna salad. This colorful combination of tuna artichokes and olive has universal appeal. Great for guests or for the kids lunch box. Try it over better greens for an awesome salad. In a large bowl, combine the tuna. Chopped artichoke hearts from a jar or can. Dice red onion, Greek kalamata olive, chopped flat-leaf parsley, Minst garlic, fresh oregano, salt and pepper. Then dress it with extra virgin olive oil and fresh squeezed lemon juice. Mix it all together.
Take any crusty loaf of bread, split it and stuff all the ingredients into the center. Wrap it in plastic rack and press it down with weights for about an hour or so. This will help all the flavors melt together and the dressing will seep into the bread. Mediterranean tuna salad, healthy, different and delicious.
