Brian P. McCarthy: Hi! I’m Brian McCarthy with everydaydish. Today, we are going to be making Garlic Roasted Pesto Gnocchi. We do not worry about gnocchi on a little bit, so let’s just concentrate on the pesto sauce. The pesto sauce is different for two reasons; one is that Vegan and we do that simply by omitting the cheese and the second is we are going to be roasting the garlic, which is going to be given in the nice roasted flavor and taken out some of the sharpness of raw garlic. Now earlier, I’ve taken the heavy garlic and I just trimmed off the edges and take off the skin and what I have left here is the peeled garlic and we are just going to add a little bit of olive oil to this, stir it a little bit, okay, and this is going to go into your oven, you are going to roast it uncovered, until it has a nice roasted garlic look to it and its going to be nice and soft.
Okay, now we are going to make the Pesto Sauce. The first and main ingredient for pesto, is the basil, it’s a wonderful flavor, wonderful Roma and I’d like to remove some of the stems on it, so its not so bitter depending on the basil you get some of you more stemmier than others and this is pretty good, and we are just going to give that rough chop and put it into our food processor. Okay. Also we are just chopping and so when you mix it, it’ll mix a little bit for your, okay, and let it right to your food processor, okay. Now it’s just a matter of having the rest of our ingredients, we have our roasted garlic, which we did earlier, our pie nuts and pick up -- choose pie nuts because they have a mild flavor and they have a nice soft texture, so just I’ll blend very nicely, add our olive oil and trying to pick up a nice quality olive oil that has a nice flavor to it.
Finally, a little bit of salt to bring out the flavor of everything, and we are just going to blend this, we are going to pulse it until it’s nice sauce and spray it down the edges once, see a few pie nuts trying to hang-on there and we’ll go forward one more time.
A very good pesto sauce is done. We’re going to put that into our bowl that we’re going to be adding the gnocchi to here in just a little bit and you can do other things with pesto sauce, you can add it to obviously a different kind of pasta like linguine or angel hair or you can add some milk to it, you have nice bread for your sandwiches pretty versatile. Okay and that’s really all there is to the pesto sauce and we’re going to get to the gnocchi here in just a second.
Welcome back, we’re ready to do gnocchi now and this is store about gnocchi it’s a very simple to prepare. Check the ingredient level on your package before you buy it though, most gnocchi is likely Vegan and you’ll see the ingredients there is some very nice quality out there. I love working with gnocchi because it cooks so quickly and you can tell when it’s done it just simply floats to the top. So, all that we do now, take the gnocchi, drop it into the boiling water, give it a little stir and now we just wait until floats.
Okay, we can see it’s floating to the top and its done, that only took a couple of minutes, turn off our heat here. We’re going to add it to our pesto sauce that we’ve prepared earlier scoop it up, drain out some little water, this pesto gnocchi, gnocchi is very hot right now, so we don’t need to put this in a pan. Cook it and you further, very nice and we’re just going to stir here. Okay, we have to serve it nice toasted bread, add some salad and gnocchi and we have a wonderful dish. Thank you very much.
