How to make Salisbury Steak Hamburger Steak with Gravy
Hey, how are you doing? I'm Dave. This is “Cooking with Dave.” Today we’re cooking some Salisbury steak. Mike asks me he said, “Can you cook Salisbury steak as my son loves to cook that he loves it so much. He would like to duplicate it. I'm going to find the cooking like your mom cooking but I'm going to cook it. I never had a little salt for your steak grown up much of the kid. I have known there was no harm in not eating in cafeterias and things, so I have a little bit of what is Salisbury steak.
When my mother would call hamburgers for the and great, so you know Salisbury steak, hamburger steak, just have them with gravy, put some onions, oh it’s so wonderful. Let me show you how to put it together.
Okay, Salisbury steak is pretty easy. We take just two pounds of hamburger. Put it in there, we're going to take two slightly beaten eggs and put them in there. Use the egg for every pound of ground beef you use. We're going to put a half cup of chicken broth in there, that’s a half of cup of chicken broth. We’re going to put a half of bread crumbs, we're going to put two-thirds of the whole chopped up onion and we're going to put about three teaspoons of garlic in there, I like the garlic, I like the onion and you can put green pepper in there, you can put some red pepper, you can put some cayenne, you can put whatever best for you like, if you like carrots put carrots in there, whatever you like put it in there. I like the onions, I like garlic. It makes my meat taste wonderful and I go for that.
And then, now to take me some regular original Kraft barbeque sauce. Use a little bit not whole a lot just give me a little flavor, just a couple of squeezes. You’ll see that about a quarter cup I guess. Then we're going to hit it with some pepper, about two shakes and some salt, put some salt in there, tastes good for the salt and then we're going to hit with some Italian season just enough to give some flavor in there.
Now, with your hands in there, don’t be scared to get you hands in your food. It’s okay to put your hands in your food. That’s part of cooking. You just put your hands up in the food. Mix all these together and we don’t want it to be too moist. If it is too moist go ahead and have some more bread crumbs because bread crumbs to soak up that moisture. But we want a little bit moist but not real moist. We mix all that and make sure your about to mix them well.
And then, we make patties out of these and cook them and call it Salisbury steak. I call it hamburgers mother thing ready but I guess you could call it Salisbury steak. All right we mix that up real good and then I start making some patties out of it and we will fry them up. Okay, here we are with out trusty cast iron skillet. I put a little olive oil in it, heat up a little bit. I'm going to put some onions, just about left of that one onion that I cut up. After it warms up a little bit we’re going to take the Salisbury steak, just lay it down there, just like cooking hamburger. You all know how to cook a hamburger. That’s all it is hamburger more than great.
It looks like one I made it Murphy burgers, right from the way it is we’re talking about his mother took him home, she make you a burger look at that. If I had a green peppers taking out of these, you know what I'm saying? If you like green pepper, put green pepper in this that should be really good if you put pepper in there. I don’t have on so I'm going to use but I like onions, I like garlic spiced up the meat real well. Oh man, it’s going to be wonderful.
Let it be cook just a couple of minutes I turn the heat down on medium I want to cook them slow, I want to make sure I can flip them and won't fall apart and they stay together. I'm going to put a little on it and try some hand can't help it. I made them kind of fit, so we need to make sure it cooks for about, just put lid on it just keep on medium I flip them over doing both sides. Okay, we cook it nicely I'm go in for a flip you see how I feel in make sure I put it firm flip it over, with some nice onion sticking to it. Now so you can make a little room.
All right, here we are back in our Salisbury steak. That’s hot. All right, you see all these grease foaming up around them we drain some them all, all right. We put one last guy in the middle. They shrunk up, will fit it, it just a matter of time. Right here we are back at out Salisbury steak cooking nicely we got them all fit in there they shrinking up. I'm going to dump off with Salisbury again and put it back and cook them so more.
All right, I just want to cook them until they're firm. Once it brown on both sides and they're pretty much cook and then I'll take them off put here we’ll make our gravy and then put them about inside of our gravy. All right, all this crumbs are set burn up onions we got down there we're going to leave them in the pan. I'm going to leave a little of grease behind. Now a lot of if you have too much go ahead and drain it off and also I want to go ahead and drain this off couple of time because I been cooking it.
Now, I'm going to let that get hot and got it on medium and I'm going to put a little flour not a lot just enough soak that all that I let behind. Go ahead and cook that a little bit, don’t burn it keep stirring it, I don’t want it too burn. After you get it what you wanted I want it some brown, a little bit brown because it’s right here going to do with some color of our gravy the longer we cook the darker our gravy will be. And so we want brown gravy, we get that all get brown. Get some of that yum in this and there off a bit pan.
All right, and then we’re going to put a cup of chicken broth in it and we're going to stir that up and let it cook turn it all around and make that some nice gravy. We just going to keep stirring that around letting it cook, put everything to come one. And then if I need to first I'm going to add some milk and if I need to I can add some more chicken stock or I can add some water, I probably add some water some salt and pepper. We have nice brown gravy so I go ahead and put me cup o milk in my brown gravy. Just go and make it a little bit lighter that’s going to be a tan color and then we’ll bring that in cooking and then it will thicken up.
All right, once you comeback at temperature start to simmer a little bit, star thicken it up turn a little more brown, just give it a little stir, got to figure that nicely. You do a little taste test on it. I will put a little pepper, a little salt and then we’re going to get a little stir, all right. Now you will taste. Oh that pretty good, oh that’s what I'm saying like there, yes sir.
Now, go ahead and make sure you heat on medium I turn it up a little bit. You heats on medium and you slide you Salisbury steaks into the gravy. That’s a nice one there. Another few nice since out of there it end up with five instead of six about we start our well you know how that is. Sometimes one got to eat. Just spoon your gravy up onto the Salisbury steak to get it covered if you want flip it over there, make sure that is covered with some gravy. Everybody is covered with gravy. Well that was wonderful there.
All right, I'm going to put lid on that, I'm going to turn it down about, I don’t know medium low and between your some places and I put some of this a little bit, let it simmer for about 15 minutes just to make sure everything cook together got one flavor going on then we're going to put this bad boys besides some mashed potatoes and filled peas. Oh it’s going to be good. All right, I've been cooking it at about 10 more minutes or so. Take a look at it give it another flip with that gravy. With that gravy that’s wonderful.
With the plate put our Salisbury steak on there, all are good done there. All right, now that’s play to food. You got a Salisbury steak with brown gravy, mashed potatoes and gravy and some fill peas.
Oh man, this is going to be good just some hamburger, some other thing gravy, some mashed potatoes, put gravy. It looks wonderful. Gravy that be good taste wonderful we made this good at here Salisbury steak, hamburger gravy whatever you want to call it. Man gets your some damn good.
