Hey! How are you all doing today? This is “Cooking with Dave”. I am Dave. I am the worlds greatest chefs which says so right here on my apron.
Today, I am cooking leftovers. I am going to cook the ultimate chicken rice. I am going to take the leftover fried chicken with some leftover rice. We’re going to put together in a casserole dish, maybe two and how much we made it and slide in the oven, cook with a nice cheese sauce inside of it and you would not believe how wonderful like I said the ultimate chicken rice. Alright, let me show you how to put it together.
Alright here I have some fried chicken, nothing special. Just some fried chicken that I have leftover in the refrigerator. This is boneless, skinless breast going on there and I am just going to cut them up into whatever size you want to cut them up. You can leave it big, serve this thing with a knife and a fork or you cut them up small, everybody can get a bite size going on with your food.
Now once again, all my chicken is cut up. Put it in my big bowl like that and I am going to take some rice. What I did is I had some leftover with white rice in the refrigerator. I took the white rice out the refrigerator and I cook some white rice. Now, I am going to put some white rice in this. Okay, I am going to put all this in there, just two cups of white rice because it looks good for my rice and chicken ratio. I am almost going to put about a cup of white rice in there just to give it a little white rice in there, not a lot because I want to make sure I have a lot of chicken and rice in there.
Then I’m going to put half cup chopped onion in there and I am going to put about two teaspoons of garlic in there and I have just some dried cranberries. I’m going to throw some cranberries in there. I am not going to throw them all in there. Just enough to give you a little color, a little flavor of cranberry, about a cup of cranberries and we’re just going to stir it all up in there. Make sure that it’s as evenly distributed. It’s looking good, chicken and rice; white rice, fried chicken, cranberries, little onion, little garlic. That is going to be good.
I have a casserole dish here. I am going to put this in there and I’ve got two of them in case I made too much because you all know how I make too much. It gets in my way to make too much. Alright, so I am going to put more in so the dish over here. We have two of these, I can have one of these leftover or maybe I could share them on with a friend. I don’t know, some over there. I kind of bring it up about halfway up your dish. You don’t want this dish to overflow because we stuff off some cheese sauce in here and we’re going to make room for that.
Okay, I am going to take a half stick of butter. Put it in there, it’s about four tablespoons of butter. I am going to take some milk. Put some milk in there. I’ll make this little cheese sauce. I am going to use two cups because I’ve got two cups full of dishes. I am going to get two cups of milk. And I am just going to let that get hot and let that start come to a bubble. Try to see and make it a bit thick and it’s not thick becausewe’re going to make it thick so we want it and I’ll show you how to do that.
After our butter gets nice and melted and our milk sauce or cream sauce starts to boil a little bit, I want to make sure the heat is about medium. We don’t cook this too high, just to get it to boil and turn the heat down a bit, about a medium, just keep stirring it and once it starts to boil a little bit, well say you know that is thick but that is not really thick as I wanted it to be because you know I am looking forward to thickness. I am looking for a cheese sauce for my chicken and rice.
So what I will do is just take four egg yolks and boom. I put them in there and I start them up. Four egg yolks in there is going to thicken this up, make it nice, look at that. Nice then we’re going to add a little black pepper. Alright, then we’re going to add a little salt. Keep stirring that about medium heat, just keep it simmering and then right at the end here we’re going to add some parmesan cheese. So we got parmesan cheese in there. Stir it and we’re going to turn the heat off and this thing is going to be ready to pour on our ultimate chicken and rice and it’s going to be wonderful.
Oh, that was a cup of parmesan cheese, by the way. Okay here we are back at our chicken and rice and cranberries and onions and what-not. We’re just going to pour to this right on top of there all throughout. Then we’re going to pour this on there on the other one all throughout to make it nice.
Then, to top this off, make sure we have a nice good cheese topping. We’re going to take t some regular cheddar cheese just to make us nice layer right on top of that and that is going to be good.
We have the nice cheese there. You know how I like the cheese crust. That thing will crust up in the oven. We’re going to put in the oven at 350º for about 30 minutes or 45 minutes, whatever it takes until it becomes warm. All right, I am going to throw in the oven and I will show you what it looks like when I take it out.
I cooked this for about 45 minutes. You want to cook it until the cheddar cheese on top starts to turn brown. When this gives you brown spots then you know you are done. All right, let’s take a look to see what it looks like. Dish it upon our plate and made like a gel a little while. I don’t want it because I am hungry. Now I want to see how it looks like. I am going to show you all what it looks like. See that? With the rice and the chicken up in there with cheese on top it, cheese sauce in there. Oh so nice and moist. That is what you call the ultimate chicken rice.
I talked about the chicken and rice because my mother made chicken and rice when I was a kid a lot. I grew up on chicken and rice. Well. my mother would take one piece of chicken about three cups of rice and feed six children and two adults. You know what I’m saying? If you take the chicken that whole piece was a chicken and she let it walk through the rice and say, “Okay, now I taste the live chicken, it’s chicken and rice.” I hate it. I wanted some chicken up in my rice.
So, I had cooked the ultimate chicken and rice with cheese and cranberries, onions and garlic and fried chicken. Man, this thing is good. The flavors you wouldn’t believe. That is good.

You all go out and get yourself this ultimate chicken and rice and no big deal, put some chicken, some rice together, little chicken sauce, slide that bowl in the oven, 350 for about 30 to 45 minutes until you get your cheddar cheese gets brown and you have a delicious lunch and your whole family will be very happy.
