Jr. Chefs of America
Hi my name is Thomas and today we are going to be making Crazy Quesadillas they are great and you can make them for lunch it s a perfect lunch. I eat all the time but, before we get started you have to remember WASH. W stands for wash your hands and your vegetables. A stands for Always ask permission, S stands for Straighten up all your supplies and H stands for Have fun. That is the most important part of today, Have fun. All right.
Now, first what we’re going to have to do is grate our cheese. This is Jack cheese it’s great but, you can use any other kind of cheese you want. All right, so lets get started, shred it just make sure that you shred it you’re going to want to shred al lot of this cheese today because we’re going to making a lot of Quesadillas. Use the bigger end of the shredder. You don’t use the little end because then your cheese will be really, really small and we don’t want that, that’s not good.
All right let’s shred this whole block of cheese and when it gets to the ends the block of cheese don’t keep on shredding it because you don’t want to shred your fingers that wouldn’t feel too great would it? All right about right there is where you’re going to want to stop. Now I will just lift it up and it looks good get it all out. I will just put it in this bowl right here okay and put this chunk right over here, great. Now we are going to take the butter, all right you going to want to cut into four slices that are completely equal, so first I cut it in half and then cut that half in half again, now we got the four chunks of butter so put it in here.
And now we can take our avocado and we’re going to slice the avocado. Now, watch carefully because this can be tricky. Slice along the middle and just like this and there’s going to be a hard core in the middle and you’re going to make sure that you going to feel a little pressure on it. Don’t cut the through the core because you’re not going to be able to do it and it will just dull your blade. All right, cut there out and I feel the core so now I just twist it around and let’s keep going, keep cutting all right and let’s meet it around on the other side right there. And what we’re going to have to is twist the edges apart just right this, all right perfect and there is the core in the middle. Loosen around the edges of this core so that you could pop it out. This will be a little tricky and this can take a little time because you want to get it our perfectly.
I will take this seed out put right there, put it aside and now were going to take this half and we’re going to let it cut the inside of this but don’t cut all the way through. First, the ones that sliver down there and do another sliver right there and one more right there making sure not to go all the way through. Now you take the spoon, go along the edge and its going to be so good. I can’t wait until we make the quesadillas, hmm yum.
All right, pop it out. It’s all right if it’s not perfect you just want it so that you can tip your this into, it’s going to be good. Okay, now there are bunch of different kinds of tortillas that you can use. Any kind I have flours, vintage, jalape?o, whole wheat. Anything you want anything. Today we’re using a variety of them but, first I’m going to clean up my work space and I will move everything over to the stove.
All right now, we’re ready to cook. Okay first we are going to turn the stove on and im going to light it, perfect. And I’m going to put to about medium heat, that’s good. All right, now we’re going to take our first piece of butter put it on the spatula, put it on there and we want it to melt. Put it around, you want to coat it evenly around the whole pan. Now since the butter is melted, let’s put this spatula right over here. Now we’ll take our tortillas and put it on the pan and we’re going to take our cheese. Take all a handful of this and just mix it on only on one-half because you’re going to be sliding the other half over and make sure not to burn yourself. Don’t touch the pan, that’s good and now you can take all your other cheese or any other cheese that you want put it on there too. Take this side, fold it over onto the other side, and put it in the middle. Just perfect then gently just press on the top, so that it will stick together and won’t fold open when you’re cooking because you know that to happen.
You’re going to see the cheese start to melt and the under side will turn golden brown. Oh that’s looking golden brown its’ like good, so it’s almost done. All right, so now to flip it, you’re going to do put it on one side of the pan and you’re going to go under and make sure that nothing sticking and then you’re going to slide it under and just flip just like that. What we’re going to want to do is turn this down to low as low as you can because this is going to cook a lot of faster in the first side. Since the cheese is bubbling and it looks really good, now let’s turn it off so let’s just slide it under and put it on your plate.
All right this will look like when we are done and I decided to cut this like pizza slices or you don’t have to cut it at all or you can do cool shapes or whatever you want. I decided to put some avocado with it and the salsa that we made in our last episode. All right, I hope you enjoyed making those Crazy Quesadillas. Thank you so much for watching I’m Thomas from Jr. Chefs of America, see you.
