Sawatdee kaa! My name is Aunchalee. Welcome to Thai Foodcast. Today, were going to make a classic Thai dish, green papayas salad or Som Tam. Green papaya salad is very popular in Southeast Asia. It is just like burger or pizza in America. I like it because it has a little bit of sour, a little bit of sweet, a little bit of salty and a lot of spices for me. It’s healthy and you can eat as much as you like and you won’t get fat.
These are the ingredients that you’re going to need to make a green papaya salad. Three cups of shredded green papaya, and this is green papaya. You need to go to an Asian food store to get it. It’s a regular papaya but it’s just not ripe yet. You need to pick the one, the green, fresh and firm. Two table spoon of limejuice, chili peppers, two tablespoon of palm sugar. This is palm sugar, it’s made from the sap of the palm tree. It is different from the regular sugar because it has a good smell to it. One clove of garlic, half cup of tomato, two tablespoons of fish sauce, this is fish sauce, in Thailand, we call it “Nam Pla”. It’s made from fish and salt and you can find it in any super market, a quarter cup of roasted peanut, half cup of green bean.
First, chop the green bean into one inch pieces. Next, chop the tomato into small pieces, you can use any kind that you like. Next, I’m going to peel the papaya, just the regular peeler and peel off all the skin. Next, I’m going to show how to shred a papaya. There are two ways that you can do it. First, I’m going to show you how to shred it with the papaya shredder, and you can find a papaya shredder at the Asian food store. You should shred it about two or three inches long or you can do it in the old fashioned way by chopping a knife into papaya and then slicing it off.
To make Som Tam, we’re going to use mortar and pestle. It’s kind of an old fashion, but it’s still the best way to make the ingredients mix well. And you can buy these at the Asian food store. First, were going to put garlic and chili pepper. You can start with a few. If you want it more spicy, you can add it later and pound it altogether.
Next, add palm sugar and pound them together. Next, we’re going to add roasted peanut. Next, we’re going to add fish sauce. Next, add lime juice. And then, pound it to make all the ingredients come together. And then finally, we’re going to add green papaya, green bean and tomato, and pound it together until all the ingredients mix well
Now that everything is mixed well together, it’s time to eat.
Green papaya salad can be anything, snack, appetizer, salad, anything. Traditionally, we eat with sticky rice and barbecued chicken. Thank you for watching Thai Foodcast. Sawatdee kaa.
